hi moms, my son is turning 3 on the 13th of this month. he is allergic to wheat, soy, milk, eggs and peanuts. Having said that, it really limits his food intake of already prepared foods. I found a cake mix in the grocery store that is allergen free. The frosting however calls for butter. most of the butter that i find doesnt contain soy but does contain milk. does anyone know of a substitution for butter to make the frosting for his birthday cake? or a butter that is soy and dairy free?

My son doesn't have the range of allergies but he does have dairy allergies. We substitute all butter products for olive oil. Works well in frostings (oil, soy milk, and powder sugar), the flavored oils on toast (italian herb ones are really good), whatever.

Hi T.
I would suggest using Ghee it is a butter subsitute. My son 5 yrs old (autism) has been on the gluten and casien free diet for over a year. I buy the cake mix (allergen free)make cupcakes and freeze them without frosting then when it is someones birthday and we have cake I pull out one of his cupcakes let it thaw and frost it. To make his frosting for a cupcake I use a tablespoon of Ghee a couple tablespoons of powdered sugar and thin it out with Rice Milk it works real well and tastes very good, you could do the same just use more if you wanted to frost a cake. I too have bought the frosting and used ghee instead of butter, the ghee tastes very good too, really it does taste like butter and melts like butter, you can usually find it at the store in with the cisco, vegtable oil and baking supplies, I have found it at VG's. hope this helps you.

My son had a friend who had the same allergies. His mom could use fleishman's light not regular fleishman's. Hope this helps!

I know you are already very limited in your choices for him, but I just want to warn you against using margarine...it is so bad for you. Is it possible to make the cake in a bundt pan and then make a glaze instead of frosting...maybe powdered sugar and ricemilk for the base ingredients...not sure what else you'd need.

Hi T.
You could blend a handful of raw macadam/raw cashews nuts w/ enough water to blend smooth, and use that as the butter. Raw nuts have a healthier oil than roasted, and blend better as well. I wonder how olive oil would work in the frosting....

Here's my fav food blog, the lady who puts it together has a ton of allergies so you should be able to find lots that work for you.

Our local Meijers has a glueten free area that has a lot of premade items in it that should work. You need to check for soy though.

My daughter is allergic to milk, dairy, eggs, and nuts. I love Cherrybrook Kitchens cake mix. My kids love it too. I keep cupcakes in the freezer so when ever we have something where everyone will eat cake, I have something for her. Anyway, since we can do soy, frosting and butter is easier, but you could just try making frosting with powdered sugar and water. If you want chocolate you can add some oil and cocco powder. I use to do this when I was nursing and my daughter couldn't have soy either. Sorry I don't have a recipe, you just need to play with the consistancy. I hope he has a happy birthday.

My son has seven food intolerances so I know the frustrations you are experiencing right now.

I make a banana icing that I found in a very old copy of the "Joy of Cooking" cookbook my husband's grandmother owned.

This recipe makes about 1 Cup
Put soft bananas through a ricer (food processor) until you have 1/2 cup banana pulp.
Sift:
2 Cups confectioners' sugar
Stir the sugar into the pulp until smooth.
Beat in:
1/8 teaspoon salt
1 teaspoon lemon juice
1/2 teaspoon vanilla
Add more confectioners' sugar if needed.

I found this icing to be thinner than most prepared frosting and it can drip down the sides so I added enough confectioners sugar until I had the consistency I wanted.

You might also want to try heating the pulp in a pan on low heat and adding 1/8 to 1/4 teaspoon cream of tartar to help the banana hold its shape. Then transfer to a bowl and start beating on low to incorporate air into the mixture, add the rest of the ingredients as follows. I don't know how this experiment will work, but it might be something to try on cookies to see how it comes out.

I also have a basic fondant recipe from the same Joy of Cooking cookbook. If you would like it, let me know and I'll send it along.

Hello T.,

look for Spectrum Organic Shortening is made from palm oil (which is 'solid' at room temperature) I use it just like butter when making frosting.

Use Earth Balance - it is made with Olive Oil, it is in a yellowish reddish tub. Make sure you do not buy Earth Balance - Soy Garden in a green tub, that is made with soybean oil. This brand is SO MUCH BETTER TASTING than Smart Balance. I have been able to get Earth Balance at Meijer or Whole Foods. It is only about $2.99 a tub. It melts just like butter. Tastes even better than butter.

I have a child with very similar allergies to yours.

I took a Wilton cake decorating class at Michael's -- I wish I'd done that sooner!

I use a Spectrum brand palm oil solid fat shortening instead of Crisco. IT IS ON SALE AT WHOLE FOODS TODAY. I do use the Wilton merienge powder (egg whites) as we can rotate eggs at our house. We completely avoid the others you mention, though.

You can get by with coconut oil, too -- it is a solid at room temp, although it is softer than the palm oil solid and won't give you an icing that you can decorate with, if that's what you want.

Find "Living Without" magazine's web site on-line, and look for the magazine at Whole Foods Market. They have lots and lots of recipes.

And sign up for the newsletter at www.glutenfree.com--Beth Hillson always sends lots of good recipes there.

i'm not sure about the makeup of marshmallows in relation to your sons allergies, but I know if you mix a pound of melted marshmallow with 2 pounds of confectioners sugar, you get rolled fondant, which is used to "frost" cakes. TONS of sugar though, most people find it much too sweet to eat.

T., Hi, been there! There is so much you can do!If you have a natural food store, GO THERE! (If not go to the library or bookstore) There are some great Cook books at all of these places. That is where you start. read, read read, make lists... Major grocery stores, (meijer, wal mart, kroger...) all have an allergy section, but your Natural food store will have the best selection. For the cake, sprinkle powdered sugar, or powdered sugar and almond milk, drizzle on the cake. (test your child with the almond milk, give him a small amount and watch for 48 hours) There is so much info out there, Look on line, post on ebay "want it now" for cookbooks, or craigs list. Good luck hon, there is a world of info out there. Luckily, My daughter grew out of ALL of those allergies! K. MoM of 5, 2 with all of those allergies, childcare provider for 30 years, had lots of children with food allergies, YOU can do it!

You can make Butter Cream iceing using vegetable shortning (not sure on the soy content sorry) powdered sugar and vanilla.

I would try Crisco, it's made out of soybean oil and sottonseed oil. It's commonly used as a substitute for butter and/or margarine.

I would try going to celiac.org if you dont get good answers on here, They are very helpful, I just found out I am allergic to wheat, rye, barley any thing like that and they have helped me alot for substututing things

Don't know specifically but Trader Joe's has quite a few foods for people with allergies. There's one on Woodward - I think at 11 1/2 Mile - and one on Kercheval in the Grosse Pointe Village. Enter the parking structure from Notre Dame. Prices are very good there too! You might try googling for what you want. A lot of families are dealing with these issues these days. Sounds very difficult!

Good luck! My granddaughter has cerebral palsy. She's 19 now and we've had a lot of fun times together! She got PT for years at Childrens Hospital. They were wonderful with her!

My daughter is allergic to dairy and peanuts...we use Earth Balance which is a non-dairy butter substitute. You can find this at Meijer or Harvest Health, it does contain soy so not sure if this would work for you. You could research how much is actually in there.

Also, Pillsbury has a vanilla frosting that we have used which is completely peanut and milk free. We use the pink one all the time.

It must be so hard to accommodate your son's food allergies.:-(
If I could make a suggestion---
I know some people that have had their allergies treated and, yes, eliminated, by a chiropractor using the NAET system. This is an electric (totally painless) process whereby they can treat you for whatever you are allergic to, and the problem goes away. My daughter and granddaughter have gone through the treatments with astounding success! They had immediate resolution of their problem. It sounds totally bizzare, but it works-peanut allergies, cats, plants- any allergy. The doctor that they saw is in Birch Run, Michigan, but he may be able to recommend someone closer to you that can do this. If I hadn't seen it with my own eyes I would think it crazy, but their success rate is phenomenal.

My oldest nephew is allergic to milk and peanuts, but until age 3 was allergic to soy, eggs, and tree nuts as well. The only kind of butter my sister could use was Smart Balance buttery spread. I just read the ingredients (we buy it, too) and it does contain soybean oil, so I am not sure if this is an option for you. Try WHole Foods (www.wholefoods.com) or Zerbo's Health Foods in Plymouth for other recommendations. I do remember that for his first birthday my mom made him a special cake with an allergen free cake mix, but there was an allergen free frosting mix on the same shelf in the grocery store that she used to frost the cake.

well...not sure if this helps...but you could try this
1 cup sifted powdered sugar
1/2 tsp vanilla Milk or orange juice
In a small mixing bowl, combine powdered sugar and vanilla. Stir in 1 TBL milk or orange juice. Stir in additional milk or orange juice, 1 tsp at a time, till icing is smooth and of drizzling consistency. You can flavor this icing with fruit juice or liqueur to match the flavor of the cake, cookies, or nut bread. Makes about 1/2 cup.

Are some of the allergies to butter, e.g., due to some of the hormones given to cows? Maybe you should try organic butter.

But in any case, Almond Milk is good. I use it on cereal and I use it in place of milk. But look around at health food stores, ask. They might be able to help you with substitute ingredients. Whole Foods is good.

Hi T.,

My son actually has those same exact allergies plus about 10more. I know how tough the allergies it can be, espcially when you first start figuring things out. You should really pat yourself on the back. YOu sound like an amazing woman.

As for the frosting, I will tell you that at Whole Foods i found an already made frosting from Cherrybrook kitchen just the other week that does have any of the allergens in it. They had chocolate and vanilla. I wish i still had the jar but i froze it and threw out the container. But i know i got it at the whole foods in Rochester at adams and walton. There is the box kind to make your own but i believe calls for allergens. This was pre-made in a cylindrical, small container. but its enough for a normal cake.

i looked for a substitution in my allergy cookbook but didnt find anything specific for cakes. I will tell you that i have made muffins using canola oil instead of butter and its turned out fine. My son is just now turning two so his taste buds are pretty bland considering what he gets to eat.

there is a website called www.kidswithfoodallergies.org. they have a message board you could post on.

last, i saw someone post about NAET. i will tell you that my son goes to a chiropractor and is getting those treatments. he has gotten treated for milk and cheese just recently. we tried cheese last night for the first time (just a little) and today again and so far nothing. I will try larger doses in a few days. He also got treated for eggs. He needs one more treatment to make it go away 100% but it is about 80% gone now. he had eggs the other day and instead of spitting them out immediately, he ate them so fast you couldnt stop him. he had no ezcema, no cramping, just a little diahhrea so that is why he needs one more treatment.
