My guess is he'll be fine. I bet the only way to put your mind completely at ease is to call your clinic. For a while there I was always calling into my clinic about my then baby and toddler - they've heard it all before!
Spoiled and expired are two different things. There's generally a grace period around expiration dates. Expiration dates on things like that mean that is the time when they product is guaranteed to be good until and after that it's eat at your own risk. My guess is that if it was truly "spoiled" ie rotten, he would have said it was gross and not eaten it.
Nature has a way of taking care of such things... lessons learned young man :)

It's probably only sugar and crisco or butter. Neither is toxic.
if he's not throwing up - he should be fine. Give him plenty of fluids and keep him hydrated should he begin to vomit or have diarehha from it...
other than that - don't panic.
He will probably get diarrhea then be fine. My DS has found and drank an old bottle with curdled milk in it and been fine.
It will all come out the other end. You only treat symptoms, don't stress about this. An upset tummy maybe. 2 days isn't spoiled. Don't worry
He'll get a stomach ache and probably the runs... and will learn not to eat stuff without moms permission first.
My son polished off an entire can of frosting one time, it wasnt spoiled but made him sick, he had a hard time ever liking chocolate again :)
Keep him hydrated and maybe a warm heating pad on his tummy till he gets it all out. He'll probably have bad gas pains and it will be temporary.
Kids can eat some pretty gross things sometimes.
I'd keep an eye on him and see if he barfs it up or has diarrhea in the next few days.
He might be fine and have no troubles.
I don't think it's worth inducing vomiting.
Blue cheese is basically moldy cheese - but it's perfectly fine to eat it.
You could call your pediatrician or nurses line for advice.
