Ok Ladies. ..I have done Easter alone with my hubby about 10 times. Honestly we usually do what feels right..one year we did a turkey, or ham etc.
Now that our little girl is getting bigger (only 2 but in that right age of getting the idea) I want to do a traditional Easter meal. So we are doing Ham..I plan on making a corn dish which is 2 bags of corn, 1/2 stick butter, velvetta, a little cream cheese, with a little sugar and salt and pepper(so its a creamy cheesy corn)
But what else??? do I do rolls or buns to make sandwiches?? How about another vegetable or what about a potatoe?? is that typically Mashed potatoes or stuffing?? what are you ladies making. there are only 3 of us....as much as I would love to go all out cooking (since I LOVE to cook) I dont think I should.

Also Im doing green beans with bacon and almonds, plus my creamy cheese corn and some of those hawaiin rolls..Its going to super fab tonight

I second the idea of adding either asparagus or a green salad or both. That would be enough of meal for three, in my opinion. My daughter has always liked asparagus either steamed just a little, or sauteed in a little olive oil.
I always do cheesy scalloped potatoes with my ham. Peel and slice potatoes until a 9 X 13 is about 2/3 full. Then in a bowl mix 1 can cream of chicken soup, 1 can cheddar cheese soup and about 1 1/2 cans of milk, and a cup of grated cheddar cheese, then mix that with the potatoes. At this point you can get as creative as you like and add red or green peppers, brocolli, ham or chicken, mushrooms, etc. Bake for about an hour and 15-20 minutes at 350 until the potatoes are soft.
Then I make green beans with bacon and almonds, and fresh rolls!
I always do ham, scalloped potatoes and asparagus. Sometimes add a springtime salad that has strawberries and blue cheese mixed in. And rolls.
We usually have ham, either scalloped or mashed potatoes and green beans. We also have cresent rolls (they are super easy and make yummy little mini sandwiches with left over ham too). Since you already have a starch dish with the corn, I would do a green veggie.

I really like to cook, so I do something different every year with each food holiday.
But Yes, I'd do a vegetable, and a bread.
And probably an app too.
Can you all cook together? Even a 2 year old can mash potatoes, you know?

We usually try to have some lighter dishes that we have not had in a while like a pasta salad, we make a tray with cut up veggies and dip, we have a jello salad in a pretty pastel...last year I stuck with watergate salad mostly because I just love the taste, but there are lots of different recipes out there for jello salads ( and I am super lazy, I never use a mold, I always just stick it in a pretty bowl) I think if you had rolls and some salad then you would have a meal. Your corn side dish sounds yummy! Just because there are only 3 of you is no reason not to go all out, I always look at it as yummy left overs and one less meal I have to prepare later...besides you can always freeze some of the ham. Or invite a neighbor = )
Turkey and stuffing are for thanksgiving... that is how i was raised anyway :) With the easter ham is usually corn, potatoes, green veggie, mac and cheese and dinner rolls.
A fun alternative to mashed potatoes is holiday potatoes. It is shredded hash brown potatoes in a casserole. It has cheddar cheese, sour cream, onions, cream of chicken soup, (salt, pepper) and buttery cracker crumbs on top. I can look up the exact recipe if you want, it is delicious :)

There are 3 of us as also. I love to go all out as well, especially when I know I don't have to cook again for another few days. Lol. I was thinking of making a ham or roast potatoe salad , cabbage, beans and rice, and a small mac n cheese. We can have fun with that for days. Lol. I'm sure whatever you make will be tasty. Ask hubby what he wants and maybe he and your little one can help out. Have fun and enjoy. :)
I wouldn't do potatoes and corn in the same meal unless I was boiling crawfish.
I don't know what a traditional Easter meal would consist of, since we don't do a special dinner for it, but I would think lots of spring vegetables would go nicely with your ham.
How about Jello Jigglers? You can get really cute egg shaped jello molds. You can also make pear "bunnies". Put a pear half on a plate, put a teaspoon or so of cottage cheese by the large end of the pear to make a bunny tale, mini chocolate chips or raisins for eyes, almond slivers for ears and grated carrots by the mouth.
