Made Barbecue Pork Last Night ... What Else Can I Do W/ It?

I made slow-cooker barbecue pork yesterday and we had sandwiches last night. But there is quite a lot of pork left because it was 4 lbs. worth! What else can I make with this pork this week? Thank you for your ideas!

When I have leftover shredded BBQ pork or chicken, I always make a Hawaiian pizza (for the crust, I make half a batch of the Pioneer Woman's pizza crust recipe)...BBQ sauce, fresh mozzarella slices, the leftover meat, sliced red onion, chopped pineapple bits, cilantro & some shredded Gouda cheese on top. Cook in a 500 degree oven for 10-12 minutes. Always yummy!

Use it as the meat on loaded baked potatoes. That and a salad is a great meal. We also do pulled pork tacos quite a bit.

You can put it into a pie crust or pastry crust and have empanadas.

Next time cook the pork pretty plain first. Then you have many more options, with the BBQ pork being the thing you do LAST with it.

I'd freeze a bunch and have BBQ one night each week or every other week in August and September. With school starting, sports, activities, etc....I'd enjoy having the ability to run home and have a hot wonderful meal on the table in about 10 minutes. Stop and pick up a package of fresh buns.

When you get home pop a zip lock baggie out of the freezer and take that chunk of frozen BBQ pork out of the baggie, dump it into a microwave bowl, put a paper towel over it and zap it for a minute. Chunk it up, zap it for a minute, repeat until thoroughly heated with the last few stirs and heating's being less than a minute each.

Then pop some buns on a tray, cover them with some foil, and heat them in the over on super super low while the meat is being thawed. You don't want to dry them out or brown them! You just want them to be slightly warm and yummy.

Add what ever side dish you want with it and in moments you have another hot good meal on the table.

We always have a night of BBQ nachos with leftover BBQ meat-chips, cheese, BBQ pork and BBQ sauce instead of salsa.
Otherwise, it will freeze beautifully.

Make some BBQ nachos! My family begs for those when we have leftover BBQ. I just lay some nacho chips on a baking sheet, add a little bit of sauce, then the meat, green onions, cheese sour cream and tomatoes. Then bake it till the cheese melts! Yummy!!

I frequented an excellent BBQ restaurant in Jonesboro, Arkansas. They put BBQ pork on a salad and served it with a spicy Italian dressing. It was wonderful.

Otherwise I would put in good baggies and put it in the freezer. It still tastes good after a month.

ETA: Boston butt roast ($1.49 lb) just went on sale so I will be smoking pork roast for pulled pork this weekend.

I made a huge pork shoulder a few weeks ago. I did pulled pork sandwiches (which I think is what you already did), carnitas tacos, and green burritos.

For the tacos all you have to do is serve warm on corn tortillas. You can fry the meat to give it a crispness, but it is not necessary. Top the tacos with whatever you'd like. We did lime and hot chili sauce with cilantro and jack cheese.

For the green burritos I dumped a jar of greed chili (salsa verde) into a pan and warmed the meat throughout. Then use in a burrito any way you want it. Beans, rice, tomatoes, lettuce, avocado, cheese, etc.

I also freezed some of the meat to use in burritos for later.

Fill croissants and bake.
Put on soft tortillas.
Freeze some for a quick Sammie dinner down the road.
That's what I'd do.

Sandwiches for lunch today or tomorrow.

You can let it be the meat to your meal tonight...fix potatoes and vegetable to go with it.

You can put it in croissant dough with cheese and bake it (let the triangles overlap and make either a log or a circle).

You can freeze it to use another night (just put enough for one meal in a freezer bag so when you thaw it you don't end up with too much).

I like it over oven-baked sweet potatoes.
In the wintertime, I make a soup of leftovers using BBQ chicken, corn niblets, and coleslaw mix. I'd definitely swap pork in for that.

We do BBQ quesadillas with leftovers. Pork, some green chilis, a bit of shredded cheese, and tortillas and you've got another yummy meal!

If you have enough for a couple more dinners freeze some in dinner size portions, it may come in handy. As far as other dinner ideas: taquitos, tacos, nachos, salad.
