Okay Mommas, here is my request... I have leftover pot roast that I would like to serve again, but I don't want to serve the same dish in a week. Do you have any ideas on how to make something different with the leftovers? I really don't want to freeze the leftovers either. Thanks for your help in advance!

I have at least two things that are family favoties with left over roast. The first is one my mom started. Cut the roast into bite size chunks and set aside, In a pan, place 2-3 cubed potatoes and 1/2 diced onion. Cover with water and boil till tender. Then add the meat, salt and pepper at the last minute and you have HASH. Another is a catch all. Take a loaf of frozen bread douch and roll out flat. Along the middle place shredded roast, mushrooms, onions, cheese (whatever you like). Pinch the sides together and as you pinch twist the seam to the underside. Let rise till double in size, Cook at 375 degrees until done. I usually spray the top of the bread with olive oil to keep moist. Good luck.

French Dip Sandwhiches
Get french rolls fill with the sliced roast and put in roll and cut in half if needed.
1 package of Au Jus and follow directions on package. I always add some grease from the meat to the Au Jus (a few spoonfuls...3-5 tbsp). Put Au Jus in a bowl to serve with sandwhiches for dipping.

What I always do is take the potatoes, carrots, meat (whatever you have in it) and put it in a skillet. I heat it all up and mash it all up letting all the liquid cook out. Then we put it in a tortilla with cheese. It's always good.

I shred mine and make enchilada casserole in the crockpot (this is a recipe for chicken ench. cass., but it makes well with roast too!):
1 each onion, chopped
1 each garlic clove, minced
1 tablespoon oil
1 10 oz enchilada sauce
1 8 oz tomato sauce
1 each salt to taste
1 each pepper to taste
8 each corn tortilla
1 each chicken, cooked and shredded
1 15 oz ranch style beans, drained
1 11 oz mexican style corn, serving, drained
3/4 pound cheddar cheese, shredded
2 1/4 ounces can sliced black olives, drained
Saute onion & garlic in oil. Stir in enchilada sauce & tomato sauce. Season with salt & pepper
2. Place 2 tortillas in bottom of slow cooker. Layer 1/3 of the chicken on top. Top with 1/3 of the sauce mixture,1/3 cheese, 1/3 beans, 1/3 corn, & 1/3 black olives
3. Repeat layers 2 more times. Top with 2 tortillas. Cover & cook on low 6-8 hrs
4. Variation: substitute 1 lb cooked & drained hamburger for the chicken. **Can also use more tortillas in the layers for a dry-er casserole**

I shred mine and use it to make roast quesadillas. I even put the veggies in there too. Just put cheddar on a flour tortilla, add the meat and veggies and top with a little more cheese, another tortilla and get it crispy on each side. It's really tasty.

I've done 3 different things with my leftover pot roast, depending on how much was leftover. The easiest is to remove it from the beef gravy, and shred it and add barbecue saue to it and eat it on a bun.
I've made beef pot pie. You can buy the pie dough (I like th pillsbury roll out in the fridge section where you buy canned dinner rolls), add a can a veg all, and if you need extra beef gravy, buy a jar. Mix it up, through it in the pie crust, put a crust on top, and bake it at 375 until crust is golden brown (about 40 minutes or so).
3rd thing is shephards pie. Same concept as pot pie as for the filling, but put mashed potatoes on top. Top with a little shredded cheddar cheese over the potatoes and bake at 375 degrees for 40 minutes or so.

I always make a large pot roast so I have left overs to shred (with a fork or just pull apart) and make beef stew in the crock pot. I use the following ingredients:
1 can diced tomatoes
1 can tomato soup
2 cans corn, drained
2 cans green beans, drained
1 can carrots, drained
1/2 bag of frozen peas (my kids don't like canned peas)
1 onion cut into small chunks
2-3 potatoes cubed
italian seasoning, garlic powder, onion powder all to taste
I add enough water to the crock pot to just about cover everything in it, then I add enough beef boullion (sp?) to give it a beefy flavor, instead of the heavy tomato flavor. I turn the crock pot on low and walk away until it's almost time for dinner. I start it before I go to work and by the time I get home, it smells wonderful and it takes just a couple of minutes to finish supper. My kids love shredded cheese sprinkled on the top of their soup and we have bread or biscuits with it.
I freeze the leftover soup for lunches for work or another meal in a week or so.

Stew is always good--potatoes, carrots, onions, and any other veggies you have like peas, green beans, broccoli. Or you could make a stir fry with fresh or frozen veggies. Make a sauce to add to the pan at the end of cooking with soy sauce, a little brown sugar and a little corn starch. Ginger can also be added.

- Sort through stew meat trimming excess fat, gristle. Cut into 1" pcs. if necessary. In med. size, heavy bottom pot, place enough bacon drippings or melted lard to cover bottom. Place stew meat, garlic and onion in pot and saute until meat is lightly browned. Add water to cover and two or three tablespoons beef bouillon, cumin, pepper and tomatoe sauce. Simmer on low heat until meat is tender. Toward end of cookin time (abt. 1 hour) add flour to thicken and continue simmering, stirring from time to time, for an additional 10 minutes.
- Remove from heat and serve with spanish rice (Sopa de Arroz) and refried beans. Salsa cruda, Pico de Gallo are good garnishes. Coarsely shopped lettuce and tomatoes and shredded cheddar cheese. Serve with warm flour totillas, or make soft tacos.
****Or just serve the beef tips over white rice as a main dish.
NOTES : I don't add near the amount of water the recipe calls for (and only 1 can of tomato sauce) because I cook in a crock pot.

One of my favorite things to do is shread a pot roast with two forks (one in each hand), pour some store bought BBQ sauce on it, mix it around, and then serve it on rolls/buns as sandwiches. This is a really simple and fast way to use leftover pot roast. :-)

I have used left over pot roast to prepare a couple of different dinners. One was to use the meat and juice to make beef dip sandwiches. All you have to buy is the hoagie type bread and either swiss cheese or provolone cheese. Heat the meat and juice so it won't dry out the meat, shred it, put it together with some swiss or provolone cheese. Put the juice in a small bowl for each person.
Another way to use the extra pot roast and juice is to boil egg noodles in the juice. Add the meat to heat it up. If you have vegtables in your pot roast be sure to include them. Makes a great casserole and something simular to beef tips and noodle but more!
These type of meals are what I call cook once serve twice meals.

Try doing pot roast sanwiches on hoagie rolls. Just pull some of the meat apart and place on the roll.Top with swiss cheese or whatever cheese you prefer and place in the oven.Long enough for the cheese to melt.Serve with condiments of your choice. Good Luck

here is what I do with mine. I shred it with a fork and put barbeque sauce on it and warm it up and put on buns. Also, in the winter I cut it up and put it in stew that I make from scratch - -this really stretches it and you can slice it and make cold sandwiches with it. All sorts of possibilities for a chuck roast.

Soup! Our favorite use for leftover roast is to make what my DH calls "Man Stew". (Meat and potatoes) I chop up the roast. Throw in potatoes and carrots. A little beef broth. It's good.

You could easily transform leftover pot roast into Beef Enchiladas or Chili. Another alternative: Slice a crusty loaf of French bread in half lengthwise and top with marinara, beef, onions, peppers, mushrooms(whatever your family likes) and mozzarella cheese...place under the broiler until heated through and cheese melts, delicious!

Whenever my family and i have leftover pot roast we reuse it to make sandwiches one night. We take the pot roast and chop it into small bites, warm it up, add miracle whip and homemade (store bought works too) barbeque sauce. It makes a great sandwich and uses the leftovers in a different way. All four of my kids and husband loves it.

Another idea is to make creamed chipped beef.....sort of like the beef stroganoff recipe: add a can of cream of mushroom soup, milk, sour cream...make it into a gravy and serve over mashed potatoes or noodles.

Try chopping the meat or shredding it and picking out the fat, then get some tortillas ( I love going by Rosa's for their $1.99/dozen flour toritllas). I chop up some onion and green pepper and saute them till they soften/carmelize and add the roast to the skillet. In another skillet I make a kind of quasadilla by throwing any kind of cheese you have on the bottom and then the mixture and another tortilla and flip it once and it is done when both sides are as brown as you like. Putting the cheese on bottom makes the mixture stick better and it doesn't go flying out as bad as you turn it.

I will have to use some of these great suggestions! Mine is similar. I always freeze the left over pot roast and gravy so they don't seem like left overs a few days later--I can use it in a week or two. When I need an easy meal, I take it out of the freezer, throw it in a pan with a bit of water, and let it simmer for a few hours until it all falls apart into a thick meaty gravy. I add a few carrots about an hour before dinner and then pour into baked potatoes for "Stuffed Potatoes."

Carne tacos! mmmmm! Use corn tortillas, cut the roast in long thin pieces and put in tortilla with white cheesa and fresh avocado. Warm the roast, cheese and tortilla together then add the avocado at end or serve in slices on the plate next to the tacos.

Hoagie Buns, Provolone cheese, a little butter, and any reserve juice you have from cooking the roast; add it all together and you have French Dip Sandwiches.
Simply re-heat your leftover meat and juice. Butter the hoagie buns and turn your oven on to broil. Top the buttered bread with meat and a slice of Provolone cheese. Toast the sandwiches "open" until the cheese is melted. Serve with the heated juice. YUM!!! My family loves this meal! Sometimes, we go straight to this meal when we have Roast.

I like to chop the left over meat and add chopped onions, mayonaise or mustard, and make it into sandwiches. Or if you like barbacue sandwiches, chop the meat fine or to your liking, add a good barbecue sauce and use as sandwiches. Using chopped onions or mayonaise or mustard is all to your own liking. I personally like a little horse radish mixed in with my mayonaise. For the plain sandwiches you might like to add a little pickle relish( dill or sweet) some people add chopped boiled eggs to the chopped beef ==you just choose what seems good to you. Happy eating! I make beef & noodles with my leftover pot roast.
1 pkg. Egg Noodles
2 cups Water
1 cup Milk
1/4 cup Flour
4-5 Beef Bouillon Cubes
Leftover Pot Roast
Any juices from Pot Roast (optional)
Boil egg noodles according to pkg. In separate pan, dissolve bouillon cubes in 2 cups of water and any juices you have from the roast. Put milk and flour in shaker and shake until flour is dissolved into milk. Add mixture to water when bouillon cubes have dissolved. Whisk until somewhat thickened. Heat your leftover roast and stir into gravy. When egg noodles are done, drain and pour gravy mixture over noodles. I make this for my husband every year on his birthday. He and the kids love it!

I take my pot roast and shred and season it to make:
Shredded Beef Tacos or Enchilada's or
Shred/cut up and add BBQ sauce for BBQ beef sandwiches.
One of my favorites is machaca burritos.
Saute some sliced onions and green peppers, add shredded beef, and crack a few eggs into it and cook. Then roll into a burrito. Makes me miss Alberto's Mexican Food in San Diego :(
PS I do the same things with left over brisket.
Some people make "hash" - but it's not for me..
You can also cube it and make a beef pot pie ..

Pot roast is just pot pie in disguise! Dice it up, add gravy, add some frozen mixed veggies and maybe some sauted onion if you are feeling like it. Put it in individual dishes and roll out some Grands biscuits on top. Brush with milk and bake until biscuits are golden. Serve with a side salad and you are a genious!
Or, add beef stock, same frozen veggies and sauted onions, some diced celery, maybe even a can of diced tomatoes with their juice to change it up a bit and you have a delicious soup. If you want to give the health Gods a nod, toss in a handful of wild rice or pearled barley for some texture. That will need to simmer a while until it is done. Otherwise, just heat and eat. A loaf of garlic bread goes nicely.
Cook once - eat twice!

In the past, I've done barbeque beef sandwiches with the leftover beef, or hot roast beef sandwiches with white bread, beef gravy (or sauce from the roast) and mashed potatoes.
If you've got veggies leftover too or some canned ones and make Shepherds Pie.

Oftentimes, when we have pot roast, my husband will take some of the leftovers to make his own version of pot-roast sloppy joe's as sandwiches for work. We tend to make pot roast with a lot of dark brown gravy and carrots, and we cook it in the crockpot until the roast is practically falling apart. That makes it pretty easy to 'shred' it later for sloppy joe's. If you cook your pot roast in a similar way, then maybe that would be an option. Hope you get lots of fun ideas! BEEF SALAD SANDWICHES! Our family loves it. Using a food processor, chop the meat, but not too fine. Then make it like you would tuna salad. Add mayo, sweet pickles (or relish) and chopped onions (optional). Sometimes I make a roast just so I can make beef salad. My aunt makes it every year for our family reunion and we all love it. I've never heard of anyone else who made this, but now the secret's out!

My family loves macaroni and cheese with leftover pot roast shredded up in it, you can also add some peas to make goulash. Another idea is ramen noodles cooked with leftover roast and vegetables in it to make a soup. You can also shred the roast into some bbq sauce and have bbq sandwiches. I love leftovers!!!

I didn't read through all of your suggestions (44) but you could also put the pot roast, gravy, and cooked carrots (if you had them) over a baked potato. Very good.
I love having pot roast because then I make pot pie for later in the week and it's a big hit around my house. Chop up the meat and any potatoes or veggies you cooked with it (or use canned or frozen if you don't have veggies left) and mix with a can of cream of mushroom soup and any seasonings you want. I use refrigerated pie crust. Line a pie plate with one crust, put the meat mixture in it and top with small pats of butter, then cover with the other pie crust. Cut slits to vent and crimp the edges. Bake at 425 for 40-45 minutes, covering the edges of the pie with foil after about 25 minutes to prevent burning.
You can use the same recipe with leftover cooked chicken, substituting cream of chicken soup for the mushroom soup.
I have made this recipe for years. It's super easy and I've never met anyone who doesn't like it (and I'm not usually a big pot pie fan!).

My husband makes the best beef stew with our left over pot roast. Purchase one 8 ounce can of tomatoe sauce, one package of beef soup starter or a package of beef stew starter (it will be next to the soups usually top shelf in a bag), several potatoes cut up in medium chunks, mini carrots or cut several carrots into two inch long pieces, a can of corn (drain), one or two white onions cut into quarters, add your beef cut in large chunks, put it all in a big pot, add water to cover top of everything and let it cook for a couple of hours or until veggies are done. Be sure to salt and pepper prior to cooking. Or we use to make open faced roast beef sandwishes......take beef broth make brown gravy, two slices of bread.....shread roast beef (pull apart) lay desired amount over the slices of bread and spoon gravey over the top. Goes great with mashed potatoes.....good luck

Oh wow! I've never thought to ask for meal ideas...fabulous idea!
Anyhow...depending on the type of roast, here are a couple of ideas:
pork: take a fork and shred the meat loosely, place in crock pot and simmer on low w/bbq sauce then serve as pulled pork sands
beef: you can use these leftovers in a simple beef stew (I literally just use what I have in the refrigerator/pantry ie corn, tomoatoes, beans, squash etc), then after you've eaten that, add cornstarch to the leftovers to thicken(and more broth if needed) and bake in a double pie crust (as you would any fruit filled pie) and voila you have a pot pie.
also...you could do something as simple as shredded pork/beef tacos, fajitas, filled empanada type entree (I've purchased puff pastry and wrapped leftover meat that I've seasoned, onions etc then baked them according to the pkg...or I've made actual empanada dough and wrapped meat in it)

My kids love it when I make a beef pot pie with leftover pot roast. I just chop it all up, make a quick little pan gravy, throw it all in a casserole dish with some veggies and top it with sheets of puff pastry. Brush the puff pastry with a little egg and put it in the oven until the top is flaky and golden. It's a big hit. Sometimes I just make the filling on the stove top while I bake off little squares of puff pastry and then I just ladle into bowls and top with the puff pastry squares. You can use biscuits too, but we prefer the pastry because it's lighter and more airy.

Hi C.,I went through all the responces and did'nt see my idea,I take the left over meat and chop up in bite size pieces.Take a bag of frozen veggies [carrots,peas]throw them in a large mixing bowl with a little chopped onion,to taste, salt and pepper.Place in layers in a pie shell then top with mash potatoes and bake until heated through. My mom made this when I was a kid. My kids love it!
4 cups of macaroni noodles
2 cans of beef concemee soup (you can use the broth from your roast too)
Leftover roast
Boil water for noodles. Heat up soup with 2 cans of water. Cut your roast up in small pieces and mix together. Simmer for the noodles to absorb the broth. We always added crushed pepper on top.

Open faced sandwiches..You take and shred the pot roast onto either bread slices or any bread of your choice. Create a light sauce and enjoy.

My girlfriend say she makes pot roast just for the left over this is so good and easy. She makes tacos with the left over meet. She uses corn tortillas. sliced alvacodos and cheese. Just fill the tortillas with the left over meat and maybe some onions if you wnat and then put in cheese and a few slcies of alvacado after you warm it up in the microwave! You can also do potroast sandwhiches on any type of bread and use the gravy and all the veggies too

Hey C., my mom (89 yo) makes what she calls "Hash" with leftover pot roast. It's kinda like beef stew but she only uses potatoes and onions. Cut the potatoes in large chunks, same with onions. Add to large soup pot, add water, and thicken with cornstarch. Cook until veggies are done.Serve with cornbread & it's a meal. Obviously you could add carrots or any other veggie your gang might like.

A favorite for our family is beef and barley soup. I take all the vegetables I can think of an cook them then puree the pot for a thick and creamy soup. Then throw in the left over pot roast in chunks and add enough barley and voila, a good healthy and stick to your ribs meal.

What I do is pull mine apart with a fork, pour some bbq sauce over it and heat it back up in the oven. My hubby will make sandwiches with it, my daughter likes it with mashed potatoes or rice.

I'm at a loss! Is there a reason why you can't serve the same dish twice in one week, just prepare different side dishes? With the cost of food going up, throwing away leftovers is just not that economically sound, especially a roast. I say enjoy the meal and thank God for the abundance of leftovers, some families with they could boast about what to do with leftovers.

Ok, After looking at the resposes I did not see beef strogonoff.
All you do is heat the leftover beef with the gravy and add sour cream (some sauted onions would also be nice) and serv it over egg noodles. Serve with a garden salad.
A twist would be to add a can of diced tomatoes to the beef and gravy along with sauted green peppers and serve over egg noodles.
Very quick. Very simple.

I usually have either BBQ beef sandwiches by adding either homemade BBQ sauce or just a bottle of our favorite BBQ sauce and then for a fast meal just doctor up some canned beans. The other way that I use the leftover meat is to make Salsa Beef by adding a thicker salsa maybe a can of green chilis and serve on warm tortillas with Mexican rice, sour cream, etc. If I have a little more time I add a can of enchilada sauce to the beef and make beef enchiladas and warm in the oven or microwave to melt added cheese. My Mom and I always had to pinch pennies when I was little and she loved to do roast because it made so much. So, after we had a couple meals of roast, we would have sandwiches, and then hash. She would mash up potatoes and mix it all together and serve a different vegetable and some corn bread or rolls with it. It was always great!
