Looking for Recipe for Corned Beef for St. Patrick's Day

Hey all you great ladies out there. I make corned beef every year for St. Patrick's Day but it always seems overcooked - dry and hard. Does anyone have a good recipe/ way to cook corned beef? I would love to make it in the crockpot if possible but I'm not set on that. I just want it to come out nice and tender. Thanks!

We do it one of two ways:

1) Boil it ... (rolling boil > simmer with lid on for 3-4 hours>add potatoes last 45 minutes > cabbage last 20 min > carrots last 10 > done when meat starts to fall apart....One trick is to pour off some of the corned beef water into small sauce pan to cook the carrots. Carrots can impart a strong flavor if they're cooked with the corned beef)

2) Braise it with coke ... (Casserole dish > corned beef > pour over one can of coca-cola > add H20 until equals about half way > tent the casserole with tinfoil > bake at 350 for a few hours > flip the corned beef over half way if you feel like it > done with meat starts falling apart)...You can omit the coke if you like, but braising means the meat is half steamed/half baked...comes out very moist. The coke tenderizes the corned beef a touch...and the sugars caramelize a bit which tastes wonderful. WARNING: You don't ACTUALLY taste the coke.

YUMMY - I'm hungry now. This will be my first year making corn beef and so this helps. I just bought my corn beef and ran into the lady in the grocery store - she told me she uses broth and beer. I'm disappointed that I forgot, but just thought I'd throw out the idea of beer since it wasn't mentioned. If you're okay with beer in your food, I sometimes use it for my ribs and even turkey - it's a good marinade

Takes an hour and 20 minutes in the pressure cooker. I just put in the pickle packet, water and onions. Pressure cook one hour. Add carrots and cabbage for another 20 minutes under pressure. If you don't have a crockpot this is an alternative. I found a really nice, exploding proof professional pressure cooker at the LA County Fair. I have used it for the last six years and it was our grandmother's equivalent of a microwave oven. It is still a great invention. I can stew a chicken in twenty minutes, let cool, debone and have chicken for tacos, chicken salad, casseroles, etc. I even did a leg of lamb in under an hour!

Ok try adding some beef broth to it and cook it on LOW for a few hours instead of on high for a short period of time... shoot for medium rare

I cook mine in the crock pot. Just dump it in the crock pot, cover it with water. If there is an extra spice packet, dump that in. Set it on low and come home 10 hours later. We eat corned beef probably once a month because we love it and it is easy. When I get home from work I cook red potates in the microwave until they are soft and then dump them in the crock pot. I roughly chop a head of cabbage and heat it in the microwave until it is steaming and then dump that in the crock pot. I let it simmer for 15-20 minutes and then we eat. It is quick and easy and delicious. If you want to actually cook your potatoes in the crock pot, it takes several hours. But if you put them in the pot in the morning they will be mush by the end of the day. Even the cabbage takes quite a while if you put it directly in the pot from the fridge because it cools the pot down and then you have to heat it back up before it starts to cook.

Crock pot

Take corned beet cabbage carrots and potatoes and the pickling packet and put it all in the crock pot early in the morning. (I made mine at 12 and it just was not cooked enough for me needs more than 7 hrs). I do not think you can over cook it in a crock pot. stick it all in cover with water and cook the heck out of it. It will come out falling apart. It will look lousy but it will be the best you have every tasted. I grew up eating it this way and I make it all the time this and everyone that has eaten it says it is the best they have ever tasted and it is the most easy way to make it.
No muss no fuss.

I have to say, if you boil anything long enough, it will be tender! If you overcook it, it's just too tender to slice and falls all apart (but it's still tender!) The way I like to make it is to boil it for 3-4 hours (depending on the size of the cut) until it is fork tender. Like I said, you almost can't overcook it. In the last hour or so I add some potatoes and then near the end I add the cabbage to the water too (but I like it with a little crunch left so I don't cook it for very long). Then I scoop out the potatoes and cabbage with a slotted spoon and slice up the corned beef. Mmmm! I made it last week and now you're making me want it again!

I just throw it in the crock pot with the saesonings that come with it, just cover it with water and let it sit ALL day. ONLY open the crock pot to add your potatoes, carrots and cabbage (cabbage goes in during the last hour or so so it doesn't get super soggy) and by dinner time your corned beef should just fall apart and be SO juicy! Ah, my favorite meal of the year - even better than thanksgiving turkey!

Hi I always do the crockpot...just easier. I put it in the night before on high, the next moring I turn it over and turn it to low and let it cook all day. I also add water when I first start it....up to almost the top of the meat. Good Luck!

I do ours in the crock pot each year. So easy and it always turns out well. I put it in crock pot with some onions and the seasoning packet, cover it in water and then turn it on low for the entire day. I leave the house at 7p and don't get home from work until 6p and it's sitting there waiting for me! Love the crock pot!

I have made my corned beef in the crockpot for the past 10yrs and they have come out
moist and tender(falls apart). Always get compliments on how good it turns out. I use
a crockpot plastic liner for easy cleaning. Cook on low 6-8 hrs.

I cook it every year and had it every year growing up. Simply put it in the crock pot, cover it with water or broth, add the seasoning pack that accompanies it and cook on low for 6-8 hours. I also put potatoes in at the same time I put the meat in and then add cabbage the last 30-60 minutes. Good Luck!

My mom always sliced it (after cooking it) and put a homemade glaze on top and placed it under the broiler for a bit.

The glaze was frozen orange juice and honey mustard I think. DELICIOUS.

Oh and on the red potatoes she pours a butter/horseradish!

I do mine in the crock pot as well, on low 6-8 hours. I toss in about an inch of water, onions, cabbage and potatoes along with the seasoning packed that comes with the beef. I like the beef broth idea another mom mentioned.

The way I cook it is cut up some onions (green, white, yellow etc) your choice with chopped fine garlic, a dash of salt and pepper, add a little olive oil, sautee it. Then add the corn beef (lower your heat), add corn or green beens (what ever your family likes), simmer at low heat at least ten minutes, then add tomato sauce (to your desire), my kids like it soupy so I make my sauce, soupy. Then toss it over rice or macaroni and it's a meal. If you like you can shred some cheese (of your choice) on top if you want it too look fancy.

My kids love this on a rainy day.

Corned beef in the crock pot is very easy. In the morning place the beef in the crock pot aand cover with water. Let it cook on low all day. If you have a shorter time to cook it put it on high. About 2-3 hours before you want to eat peel and quarter potatoes and carrots and add them to the crock. You can also add quartered onions at this time if you like. Then about an hour before you want to eat cut a head of caggage into wedges and add as many as you think will be eaten. When ready to eat remove the meat rom the crock and set it on a carving board to cool. Remove the veggies from the crock and then slice the meat cutting across the grain. Now you can either place the meat on a plater and surround it with the veggies or just put the veggies into serving bowl. I usually have mustard available for those who like to dip the corned beef in that and also white vinegar to sprinkle on the cabbage.

Every year I put mine in the Crock pot on low 1st thing in the morning. I cover it with water and add the seasoning packet that comes inside the package. I add cut up red potatos, too.
Then about 1/2 hour before serving, I take some of the water out and add more water to a sauce pan and boil cabbage that I've sliced. Sometimes if there is room , I just add the cabbage to the crockpot.
