Hi All, I'm engaged to an Irish man (red hair and all!) and would like to suprise him with an Irish meal next week so I'm looking for recipes you have made yourself. I'm not a great cook, so the easier the better! If anyone has any recipes, I would appreciate the help! Thanks moms!

My grandma (the Irish one) told me once that lamb was more of a traditional Irish entree than corned beef. So that's my suggestion--lamb chops and potatoes.

As far as ease of cooking, I'd ask whoever's in the meat department the best way to prepare it. I assume you could rub herbs on it then roast it. You should be able to find tips on how to know when it's done at allrecipes.com, foodnetwork.com, and from the person in the meat department.

Last year I got a great corned beef at Costco all seasoned and ready to go. I cooked it in the crock pot with some potatoes and cabbage and it was fantastic. My husband who is part Irish absolutely loved it. You could serve it with some home-made Irish soda bread which is really easy and yummy fresh out of the oven. Good luck.

We also do corned beef and cabbage. I make it in the crock pot which is REALLY easy! The corned beef comes with a flavor packet you sprinkle on the meat and then put enough water in the crock pot to cover the meat. You cook it for 6-8 hours on low. When it's close to dinner time (usually 30 minutes before) I cut up the cabbage into wedges and put in the crock pot. We don't cook it more than 15-30 minutes because we don't like the cabbage too soggy. You can also add carrots and onions while the meet is cooking. I pair the corned beef anD cabbage with red (new) potatoes. I cube them and boil them about the same time you put the cabbage in the crock pot. When they are soft, drain and put a little butter on them and sprinkle with salt/pepper and enjoy!

Hello Mama's! I wanted to let you all know that I went to the Fry's on 51st Ave/Baseline this morning (Monday, March 16th) and they had the Corned Beef Flat Cut on sale for the price of the Point Cut. The were $1.27/lb vs. $2.49/lb. The butcher said they priced them all the same because they got alot more flat cuts in than they expected. The flat cuts are better because they have less fat. They are in a separate cooler near the sausage and chicken. I saved about $19 on two. I can't wait to eat it tomorrow!!

Here is a super yummy recipe for Irish Champ. It goes great with corn beef & cabbage. I got it from Allrecipes.com
INGREDIENTS (Nutrition)
2 pounds potatoes, peeled and halved
1 cup milk
1 bunch green onions, thinly sliced
1/2 teaspoon salt, or to taste
1/4 cup butter
1 pinch freshly ground black pepper to taste

What to Drink?
Old Fashioned George Dickel

DIRECTIONS
Place potatoes into large pot, and fill with enough water to cover. Bring to a boil, and cook until tender, about 20 minutes.
Drain well. Return to very low heat and allow the potatoes to dry out for a few minutes. (It helps if you place a clean dish towel over the potatoes to absorb any remaining moisture.)
Meanwhile, heat the milk and green onions gently in a saucepan, until warm.
Mash the potatoes, salt and butter together until smooth. Stir in the milk and green onion until evenly mixed. Season with freshly ground black pepper. Serve piping hot in bowls. Set out some extra butter for individuals to add to their servings.

Good Luck and Happy St. Patrick's Day!
Jenny
