My daughter is turning 1 in just a couple weeks and I haven't been able to find a place that can make a lactose free cake with icing. I decided to make it myself and have found several recipes on-line, but am not sure which to go with. Does anyone have any advice or suggestions? Any help would be greatly appreciated!

If you don't want to use soy milk for fear of altering the flavor, try lactaid milk; it is regular milk that is altered to be lactose free and it tastes almost exactly like regular milk (maybe slightly sweeter). I drank this after having my 2 sons because the dairy upset their stomach with my breastfeeding, and I just could not stomach the soy milk. Lactaid is a little more expensive, but a great lactose free alternative.

Make any icing just use the soy milk instead of milk
As far as frosting is concerned, there are recipes out there where you can substitute the milk with water (for example, I'm a cake decorator by hobby and the Wilton recipe I use calls for either milk or water and I always use water so I don't have to worry about refrigerating frostings with dairy in them). Also, you can make a very simple glaze-like frosting with just powdered sugar and water. Use a small amount of water at first and then add more as necessary (it will look like you need a lot at first, but really just a tsp or so at first may be enough)

make the frosting w/ palm oil instead of butter. Spectrum vegetable shortening (long name for palm oil). (powdered sugar + palm oil + vanilla and a couple of tablespoons of whater or rice/soy milk.
use olive oil instead of butter for making the cake.

Miss Roben's mixes are a line of mixes that are free of major allergens. I just made a cake and frosting with the Miss Roben's mixes. They were wonderful. Every kid at my daughter's party ate it all up. The parents were raving and could not believe the cake was even wheat free. You can order them online.

The best butter substitute I have found for frosting is palm oil non-hydrogenated shortening at Whole Foods. It is much healthier than Crisco. For info on the health benefits of saturated fats from tropical oils like palm oil and coconut oil, see www.mercola.com.
I use Rice milk rather than regular milk.

I know you said you were looking for a recipe...but just in case things get hectic and you wanted to entertain ordering from somewhere, there's a great place that makes vegan cakes called Spiral Diner. I don't know where you live, but there's one in Fort Worth (near the hospital district), and now there's one in Oak Cliff. I'm not vegan, but I've ordered cakes (and cupcakes) from there, and they're sooooo good! (I even like their food, on the few occasions I've eaten meals there.) The cakes were a hit with all I fed...especially my husband, who is a huge meat/dairy fan! I should say, though, that you shouldn't expect a typical bakery setting (where you go in and flip through cute-sy books)...they'll decorate with words and simple designs (like small flowers, dots, etc.). I've seen a couple with drawings on them, so you could probably ask...but I'll warn you I've seen some vulgar designs there. Don't let that scare you off, though! It's great cake, simple in design (maybe you could use some of the other icing recipes to decorate it how you want it), and fairly reasonably priced (you will pay a little more for the ingredients they use vs. traditional bakery cakes). 2 lb bag of pure cane powdered sugar
2 tbsp meringue powder
2 sticks of crisco
The following ingredients should total 1/3 cup
1 1/2 tsp clear vanilla
1/2 tsp butter flavor
remaining water
cream crisco in electric mixer. Add dry ingredients until too dry to mix. Add liquid ingredients a few drops at a time alternating until all ingredients are used.
This is a version of the Wilton perfect white frosting recipe used for wedding cakes etc. It's also dairy free and pretty good!
My niece is allergic to milk products...any milk products...can't even have trace amounts in food. My MIL found milk free icing at Sam's club. It is their "buttercream" icing. It is not bad, the only problem is, they sell it in great big huge tubs (I think she bought a painter's type bucket of the stuff).

I believe you can find a frosting mix that is lactose free at Whole Foods..under the brand Cherry Hill. It is the bulk/baking aisle. They may even have a Whole Food store brand now too..called 365. They offer a lot of nut free, gluten free and lactose free baking and frosting mixes.
My youngest son was severely allergic to all milk proteins when he was an infant (has since outgrown it)...and I used to buy Whole Foods vegan (no animal products) cake from their bakery. SO YUMMY!!!

I have lactose intollerant kid & husband. Use Soy milk & Soy Butter. It works great and you can't tell the difference. If you child has a problem with soy use margarine.
You might try www.vegweb.com. They have many fantastic vegan recipes. Also I really love the vegan cook book series by Sarah Kramer. She has one called "La Dolce Vegan" that I'm pretty sure has recipes for sweets and everything I've ever made from her has been amazing. I like to sub almond milk for regular, I think it has the best flavor for cakes and the like, especially the vanilla almond milk. Good luck!
My friend's son is lactose intolerant and they just got a cake for his birthday from Walmart. It was made with lactose free frosting and was all decorated like any other kid's cake.

There is a good dairy free, egg free, nut free cake mix I find at Target called cherrybrook Kitchen they have chocolate and vanilla. they are good. They also sell frosting or you can make powdered surgar frosting with soymilk and smart balance LIGHT(Only the light is dairy free) for the butter . It is yummy.My neice has dairy alergies also. We use the smart balance is rice krispie treats as well. Hope you like it.

I use the organic non-hydrogenated shortening (Spectrum brand you can find at Sprouts and Whole Foods) to make icing/frosting (my kids can't have dairy) and replace the milk in the recipe with rice or almond milk. The vanilla flavored works well in baking. The frosting taste great and rivals any made with the real dairy products.
I've always used box mixes and I make frosting with Crisco and powdered sugar for decorating cakes. I'm sure you can add water instead of milk and to make a cake extra moist substitute applesauce for oil (it use to be printed on the box to use applesauce).
