I have a fabulous recipe that's done in the Crockpot. It takes about 15 minutes to put together... cooks all day and is so yummy my mouth is watering just thinking about it!
It's cornbread dressing with pecans, sausage and dried cranberries.
If you're interested just let me know. I'm more then happy to dig it out of my recipe box and pass it along. :)

Hey M.!
I have been making this syuffing for years and love it, so give it a try.

- 1 pagkage of Pepridge farm bread crumbs (any kind except the cornbread kind) I usually use the Pepridge Farm bread crumbs in a blue package.
-Jimmy Dean Sausage the original kind
-1 apple
-Pine Nuts
-about 1/2 -1 cup celery (optional)
-about 1/2 - cup onion (optional)
-4 cans of Swanson chicken broth

You can cook your sasuage a day or two ahead and cut up adn chop all of the other ingredients as well, so on Thanksgiving day all you have to do is mix everything together with the chicken broth. If you cut up the apple the day ahead squirt lemon juice on the apple it keeps it from turning brown.

So once you have the susage cooked and all other ingredients chopped just mix it all togetehr with teh chicken broth. You can either use it to stuff the Turkey or put it in a pan at bake it at 350 degrees for 30mins or until the stuffing starts to lightly brown. If you stuff the Turkey the stuffing will be wet stuffing as where if you bake it in a pan you will have a dry stuffing I usually do both. I hope you like itand have a happy Thanksgiving!! I have the BEST stuffing recipe. I grew up with my mom making bread stuffing (the kind that goes on sale really cheap this time of year) she would add sauted onions celery and raisins. Use chicken broth and a bit of wine (I think) to moisten it. When I grew up and got married I just made bread stuffing because that's what I knew how to do. Then my husband mentioned that his grandmother used to make a rice stuffing. I wasn't too sure about that idea. Well we couldn't get the recipe from his grandmother because she couldn't even remember making rice stuffing, let alone remember the recipe. So we found one that we just LOVE LOVE LOVE, I will NEVER go back to making bread stuffing again.

Rice Stuffing:
1 apple cored and diced
1/2 c chopped onion
1/2 c sliced celery
1/3 c seedless raisins
1/3 c dried cranberries
1/2 tsp poultry seasoning
1/4 tsp dried thyme
1/4 tsp ground black pepper
2 tsp margarine
3 c cooked brown rice*
1/3 c slivered almonds;toasted
1/4 c apple juice (or cranberry juice)

Saute the apple, onion, celery, raisins, and dried cranberries in the margarine in a large skillet until tender crisp. Add the poultry seasoning, thyme and pepper. Stir in the rice, toasted almonds and juice. Use as a stuffing for poultry (yummy stuffed in the bird). To serve as a side dish, cook until thoroughly heated.

*A blend of brown rices or a brown & wild rice blend may be used.:)

Grandma always made home-made stuffing. I'm more lazy, so I get the Mrs. C (something) and add what it says plus some celery and onion. But here is what I remember from grandma:

2 loaves bread, dried out of bag overnight and broken into small pieces
celery (2-3 stalks)
onion (1/2 to 1, depending on taste)
small can water chestnuts
butter (it was 1 or 2 sticks)
seasoning (sage, parsley, thyme)
turkey broth if you're not cooking it in the bird

finely chop the celery and onion. sautee them in the butter (there well be lots of liquid). put the bread 'cubes' in a big pot or bowl and stir in the water chestnuts. slowly add the butter/veggies to coat the bread crumbs. add a bit of broth if your not cooking it in the bird, it should be moist but not mushy (more moist if you're cooking separately and have added broth). Season according to taste.

I don't know if you want to try this for the first time if you're feeding guests. But maybe you can try it out on a small scale for your family and see if you want to try it for another year. Or maybe it gave you some ideas to add to other recipes. Anyway, I hope it helps some

I am also a SAHM with 3 kids ages 17, 8 and 7 they keep me busy but I love it. I will have also been married for 11 years on Dec 6th.

Here is a recipe my mother taught me and we just love it. We never really measure so I will try and get this right.

1 bag stuffing mix (we use Pepperidge Farm)
1 stick butter
1 can chicken broth (14-15 oz)
1/2 to 2/3 cups onions chopped depends on taste
1/2 to 2/3 cups celery chopped depends on taste
1 egg
1 tsp sage
1 tsp poultry seasoning

Warm chicken broth and butter until butter is melted. Mix stuffing with sage and poultry seasoning. Add celery and onion and mix. Add egg and mix. Add chicken broth with butter and mix until all is moist. Put in a Casserole dish and bake at 350 degrees for about 40-45 minutes. We also like to slice a stick of butter and put the slices on top to melt in while cooking. You can also stuff the turkey with it and cook any leftovers in the casserole dish. How much you put in depends on the size of the turkey. We usually have a 22 lb turkey and put 1 whole bag prepared in it. For this we stick a whole stick of butter inside the stuffing after we put it in the turkey. Just an extra tip if you rub butter all over the top of the turkey and sprinkle with pepper and baste it a few times while it is cooking it should be very moist. It works for us. Enjoy! Hope this wasn't too much info.

You know I loved my moms. She bought the Herb Pepperidge Farms cubed stuffing pack, put in butter and chicken broth (measurements are on back of bag of stuffing) in a pan and warmed it to melting, the poured it over the cubed bread, put in diced celery and onions. If you want to fancy it up you can add sausage or dried cranberries and walnuts.

The put it in a baking dish and baked it at 350 for 30 minutes or until crunchy and brown on top. She stuffed the turkey with the same mixture, but I have never cared for that soggy stuffing from the turkey, plus too paranoid about health risks cooking stuffing in a turkey period, hee hee. My kids like it crunchy on top and moist in the middle so I just do it in a seperate baking dish, it also makes cooking time for the turkey less without stuffing.

This is how my mother-in-law does it. She uses bread cubes (I get the seasoned ones but she likes plain), onions, celery, gizzards (turkey is better but chicken will work), egg, salt and pepper. She boils the gizzards until their done. She dices them and adds them to the bread cubes. She lightly sautees the onion and celery in a little bit of butter and also adds this to the bread cubes. She saves the water from boiling the gizzards and uses it to moisten the mixture (if you do not want to use gizzards or the left over water you can use chicken broth). She adds one egg to make sure it all sticks together and adds some salt and pepper to add some flavor. She uses some of this mixture to stuff the turkey and the rest she will bake at 350 for about 20-30 minutes.

This one is our family favorite:

2 lbs sausage
2/3 of a large bunch of celery
1 large onion
1 pkg “dressing” (I prefer Mrs Cubbisons)
1 pkg stuffing crumbs (I prefer Pepperidge Farm)
3/4 c melted butter
32oz chicken broth
Sage
Poultry Seasoning
Celery Salt

Saute sausage, celery and onion together until the sausage is completely cooked. Put pkgs of dressing and stuffing together in large baking pan. Sprinkle sausage mixture over it. Pour melted butter over all, then add chicken broth. Stir all ingredients until mixed in well together. Sprinkle with seasonings to taste. Bake in oven-uncovered- at 350 until it is dried out to the texture you prefer.

I don't know if you have heard of the website allrecipes.com... it is a great resource. You can find recipes for almost anything and the cool thing is that they are all rated by people who have made the dish. I use it a lot and have had really good experiences with it. It is free by the way.
