I have a recipe for a french onion soup, homemade all the way. I cook everything (almost) from scratch, that way I know exactly what is in it and how bad it is for me!
If you want a homemade soup mix (what I use for a french onion soup), melt a few tablespoons of butter in a saucepan. Stir in a teaspoon of white sugar. Cook 3 onions, thinly sliced, in this mix over medium heat for 10 minutes, or until golden brown.
Stir in a tablespoon of flour until well blended with the onions and juices. Add 2 1/2 cups of water, 1/2 cup red wine, and 10 1/2 ounces of beef broth. Heat to boiling. Reduce heat to low. Cover soup, and simmer for 10 minutes.
Other people add a bunch of seasonings, which you can totally add to taste. This is what I use with pieces of french bread and mozzarella or swiss cheese on top. Play with it and you will make something delicious!
