1 lb ground turkey (browned)
1 can four cheese spaghetti sauce
1 can traditional spaghetti sauce
1 can italian tomatoes
16 oz cottage cheese
12 oz or so of ricotta cheese
a pound of shredded fiesta blend cheese
1 pack lasagna noodles

Boil lasagna noodles according to directions. Mix first four ingredients to make 'sauce'. Save half for spaghetti one night. Combine cottage and ricotta (I use a mixer - get it really mixed, really smooth). Layer:

Sauce
Noodles
Cottage/Ricotta blend
Sauce
Fiesta blend
Noodles
Cottage/Ricotta blend
Sauce
Fiesta blend
Noodles
Cottage/Ricotta blend
Sauce
Fiesta blend
I usually run out of noodles first.

I don't know how italians will feel about it, but my american children and inlaws slurp it down.

Cook at 400* for 20 - 30 minutes or so until hot and bubbly.

I think these are all good...I also add low fat pork sausage and onion to mine and lots of spices...basil, oregano, tony cachere's (for an extra kick) black pepper and salt. Be sure you let it rest after baking, if not the first scoops will be very runny.

12 oz. bulk Italian sausage or turkey Italian sausage
1/2 cup chopped onion
1 14-1/2-oz. can diced tomatoes, drained
1 8-oz. can tomato sauce
2 tsp. dried Italian seasoning, crushed
6 dried lasagna noodles
1 egg, lightly beaten
1 15-oz. carton ricotta cheese or 2 cups cottage cheese, drained
1/3 cup grated Parmesan cheese
1 10-oz. pkg. frozen chopped spinach, thawed and well drained
8 oz. sliced mozzarella cheese

1. Preheat oven to 375 degrees F. For meat sauce: In a large saucepan, cook sausage and onion until meat is brown and onion is tender. Drain off fat. Stir in tomatoes, tomato sauce, and Italian seasoning. Bring to boiling; reduce heat. Simmer, uncovered, for 15 to 20 minutes or until sauce reaches desired consistency.

2. Meanwhile, cook noodles according to package directions; drain. Rinse with cold water; drain again. For filling: In a medium bowl, combine egg, ricotta cheese, and 1/4 cup of the Parmesan cheese. Stir in spinach.

3. To assemble, in an ungreased 12x7-1/2x2-inch baking pan, arrange three of the cooked noodles. Spread with half of the filling. Top with half of the meat sauce and half of the mozzarella cheese. Repeat layering noodles, filling, meat sauce, and mozzarella cheese. Sprinkle with the remaining Parmesan cheese.

4. Bake, uncovered, about 30 minutes or until heated through. Let stand for 20 minutes before serving. Makes 8 servings.

I got this from my MIL and I LOVE it! I had never made lasagna before, and it was much easier than I thought it would be! Also, www.allrecipes.com is a great website!!

1 8 oz package lasagna noodles
2 lb ground beef
1 tsp seasnoned salt
2 cloves garlic, crushed
1/4 tsp pepper
1 (28 oz) can diced tomatoes, drained
1 (28 oz) can tomato sauce
1 package spaghetti sauce mix
1/2 lb mozzerella cheese
1/2 lb ricotta cheese
1/2 cup parmesan cheese

Brown meat, drain. Add salt, garlic, and pepper; cook slowly 10 minutes, uncovered. Stir in tomatoes, tomato sauce, and spaghetti sauce mix. Cover and simmer about 30 minutes on low heat. Meanwhile, cook lasagna noodles.

In 8"x12" baking dish, layer 1/3 meat sauce, cover with strips of lasagna noodles, then mozzerella and ricotta cheeses. Repeat layers ending with meat sauce. Top with parmesan cheese.

Bake at 350 for 20 minutes or until bubbly.

Serves 6-8 generously.

Here's a pretty simple one that my family loves.

12 oven ready lasagna noodles
1 pound ground beef
Ricotta Cheese (15 oz)
Tomato Sauce (I like to get the Hunt's Italian seasoned tomato sauce) either 2 regular size cans or 1 large or 4 small
Shredded Mozzarella (4 cups)
1 egg (slightly beaten)
dried Thyme

Preheat oven to 350. Brown ground beef in skillet. Drain. Add Tomato sauce. In a small bowl, mix Ricotta cheese, egg and dried thyme. In a 13X9 baking dish, spread about 3/4 cup meat sauce. Place 3 uncooked noodles crosswise over sauce. Make sure they don't touch or touch the sides, they plump as you bake. Then spread about 2/3 cup Ricotta cheese mixture evenly over pasta. Spread another 3/4 meat sauce, then sprinkle with 1 cup Mozzarella. Another layer of noodles, then ricotta, meat and mozzarella. Repeat that until you have 4 layers (3 layers of noodles). On the top layer, sprinkle a bunch of mozzarella and you can add some grated parmesan too if you like. Cover with foil and bake for 30 minutes. Then remove foil and bake for another 10-15 minutes or until hot and bubbly. Let it sit for about 5 minutes after taking it out of the oven.

My hubby is Italian.

I follow the basic guideline on the lasagna box. In the ricotta cheese mixture, I add some frozen, thawed, drained spinach.

I make my marinara and do not use jar sauce (unless I am in a HUGE hurry). When I make my sauce, I at least double my recipe. The sauce is great and it freezes well.

My marinara consists of crushed tomatoes (cans), finely chopped garlic, carrots, onion, fresh basil, touch of sugar, Italian seasonings and a sprig of fresh rosemary. I let it simmer to make sure all the flavors blend well. Take the rosemary out when it is done.

Then layer the lasagna dish, use a lot of cheese, and Yummy! Serve with an Italian salad and red wine. I also serve Hirsch's Hot Italian sausages on the side. I do not add meat to the sauce.
