Kids with Food Allergies

I am seeking some help with my son who was recently diagnosed with milk, egg and soy allergies. After 3 weeks of horrible hives, we finally got to the bottom of it and he now is adjusting to rice milk and vegan mac and "chreese" (which btw tastes NOTHING like mac n cheese.) He can only eat so much meat, fruit and veggies, so if someone has some good snack ideas I would really appreciate it. Also, we can't use "egg substitute" either, so any ideas for substitutions for baking would be great! I have a good online source, but am looking for local moms who are going through similar situations. THANK YOU!

My daughter and I were recently diagnosed with wheat/gluten allergies, and I know it can be really hard to find things to eat/serve your family when allergies are involved. I recently found a celiac support group that has been really helpful. We meet once every month or two and share products we have found, recipes, and even taste things that are wheat and gluten free. Plus it is just nice to talk to someone who understands what you are going through. I would look online and in your local directories etc. and try to find a supprt group for milk, egg, and soy allergies. Someone there could help you find other resources as well. I wish you luck! My son (who is now almost 3) was diagnosed with milk, egg, and nut allergies after months of misery. There are limited resources. I am currently compiling a book of recipes that should be available soon. The egg replacer from the health food stores works in some recipes, but not all. It is a game of trial and error. Sorry, I forgot to say what I use to bake. I have recipes that do a combination of 1 1-2 T. each of water and oil with 1 t. baking powder. You have to mix them together before adding to the recipe and allow it to "fiz" for a minute. However, I prefer using water, vinegar, baking powder mix in the same increments. Using the oil seems to add too much oil in some of the recipes. Hope this helps. If you are looking for a particular recipe for something, let me know. I don't have any great snack ideas. You can make your own crackers so they don't have soy in them. I have a few recipes that don't have any soy in them. Let me know if you want them!

Wow that is really tough. But you are not alone. I have a daughter with egg and nut allergy. Unfortunately, it looks like you have a trickier situation. For the egg allergy there is a powder egg substitute (no egg) that you can get at Whole Foods called Ener-G. It comes in a box for about $8 - but it will last for a long time. We do all of our baking with it- especially pancakes. There are some recipes on the box too. I would suggest going to Whole Foods or a natural food store and ask about possible allergen free snacks.

My daughter has dairy and nut allergies so I know how hard it can be.

There are many different vegan mac and cheese recipes so if you find one that you dont like, try a different one. We found one not too long ago that was really good, I just couldnt get past that nutritional yeast smell. My kids really liked it though.

One of our favorite desserts is "Welfare Cake" or "Crazy Cocoa Cake" Its vegan and its so yummy! You'll never miss the eggs or butter.

This is the variation I make. Its out of the Best of Sunset Low Fat Cookbook.

1 1/2 C Flour
1 C granulated sugar
3 TBSP unsweetened cocoa
1 tsp baking soda
1/2 tsp salt
5 tbsp salad oil
1 tbsp apple cider vinegar
1 tsp vanilla
1 C cold water
2 TBSP powdered sugar

grease an 8X8 pan

whisk together the flour, sugar, cocoa, baking soda, and salt.

Mix the oil, vinegar, vanilla and water together in a measuring cup and pour all at once into the dry ingredients

Mix until just incorporated. Pour into the pan. And put in the 350F (375 for high altitude) for 30 minutes.

So yummy!

Also for pancakes you can mix up regular pancakes just substitute the egg for a mashed banana,the butter for oil and the milk for vanilla rice milk. YUMMY! Pancakes are a big hit in our house, I usually add extra stuff to it like applesauce and blueberries.

For alot of baking, you can subsitute mashed banana for the eggs. A friend of mine who has eliminated pretty much everything out of her diet because of a sick child, made a yummy cake with mashed bananas, gluten free/soy free flour, dates, canned pumpkin, and rice milk. It was so good. I dont know the recipe specifics and she doesnt really either. She just threw everything into a bowl and baked at 350 until it was done.

I made oatmeal cookies once and substituted the eggs and oil/butter for a can of pumpkin and then spiced it like I would have spiced pumpkin pie and added some cranberries. YUM!

You could also make ice cream for him with coconut milk. There is a blog out there, I cant remember what it is but if you google rice milk and ice cream or vegan and ice cream, it will come up.

There is also a brand that you can get at whole foods or wild oats thats called Enjoy Life. Its an allergen free brand of snacks. I hear its really good.

I have had to cut dairy and soy out of my diet because my seven week old seems to be allergic and I am nursing. Eggs would be a little more tricky. enjoylifefoods.com is a site that is dedicated to allergy free foods. you might try there... also most rice based items don't use dairy, soy or eggs. great harvest bakery make breads and cookies that are free as well. I am not sure on how to substitute eggs in cooking but you can use rice butter or olive oil in place of regular butter and rice milk instead of milk, as you said.
