There's this place http://www.texasinfantaquatics.com/ to help you find some places.
I used Tammy Nelson in Prosper. She does one on one private lessons throughout the summer. My 2 little ones used her as well as several other moms I know. She teaches baby swim safe, survival swimming. We loved her. Her # is ###-###-####
Try Swim Plus in Plano (Parker Rd and Ave K) or the Emler swim school. They should be able to point you in the right direction.

I haven't used this, but would've if my boys were younger. www.infantswim.com. It comes widely recommended by many people I know. Lots of survival stories!!!
I have seen the videos on http://www.infantswim.com/ and they are quite amazing. I did not take my child there for lessons though.

She is great. Teh sessions are short so the baby doesn't get too tired and she teaches the survival techniques so they can kick and roll over onto their backs. She teaches in McKinney at the indoor pool at the Howard Johnson Hotel.
