Had egg salad sandwiches today & tonight I will make some deviled eggs and then I will pickle some and I have to save a couple and make some tuna w/eggs and tomato, onion and pickle for myself...no one else likes it but I LOVE it!
Egg salad with chunks of speckled blue, pink, orange and green egg whites all mixed in :-) I'm really bored right now, LOL, what are your leftover eggs going to be used in (for)? :-)
Sounds exactly like ours will be Toni minus the extra mayo on the bread...i think the egg salad has enough :-)

Egg salad sandwiches...add mayo, a little dry or regular mustard, some finely diced onions and some sweet or dill pickle relish...a little salt and pepper, serve on some nice bread (toasted or plain), put a little mayo on the each side of the bread. If you want to go a little further, add a slice of tomato and some lettuce.
Unfortunately, I forgot to put the eggs back in the fridge after the kids found their baskets, so ours are a total loss. Oh well, at least I bought the 99 cent eggs instead of the cage-free, vegetarian, organic $3.99 eggs ;-)
We made the colored deviled eggs for Easter and they were gone w/in minutes of being put out, so no leftovers! :) They looked so cute w/ all the colors...my husband said it looked disgusting! haha! We used 5 colors and I was pretty proud!

I'm a bad mom....we didnt even color eggs this year LOL
My boys are young enough that they dont ask to color them. Last year was a fiasco, so we opted out this year!
So far we have just been eating them as snacks with a little salt, my kids love them :). Tomorrow I think I am going for the rainbow egg salad as well!
I made deviled eggs and will probably make tuna salad tomorrow. My girls love to dye eggs, but don't like to eat them, so I will be eating lots of them!!
We don't have any, my kids went to my MILs to color eggs and they stayed there.
If they were here, I would do egg salad, or bring them as breakfast to work.
My husband takes them to work :) He is the only person there with a child. His co-workers actually thought it was pretty cool! He thought they might make fun of him all day, but instead they were jealous!!
I see potato salad in my future :) yummy!

I have 13 year old and 6 year old sons. That means I boiled and colored eggs for 12 years.
This year we decorated cookies instead of eggs! Much easier to figure out how to eat! Haha!

My favorite recipe from my childhood was creamed eggs on toast....
Diced hard boiled eggs in a white sauce over toast...... yum!
