So, I've resigned myself to egg salad sandwiches for a week after Easter... But does anyone have any recipes for how to use all those hard boiled eggs in a different way?? Thanks!

You could pickle them...they would keep for a long time in brine. I can't really think of too much else to do with already cooked eggs. Chop 'em up and throw them in a salad? I eat a hard boiled egg every day sliced with salt and pepper and toasted with a little butter on a piece of wheat bread. Its a nice balance of protein, carbs and good fats to start the day.

Here's something my mother used to do with hard-boiled eggs. Slice the eggs and lay them on toast. Pour over a white sauce and enjoy. The white sauce is essentially a gravy, including butter, flour, and milk with some salt and pepper.

When you get invited to someone's home (hopefully on Easter!) bring those DEVILED EGGS. Even if the whites of the eggs may have little cracks and dye marks, not a big deal. We call them Easter Deviled eggs! I just gently slice the egg, horizontally, pop the yolk out, keep the best egg white halves for a nice deviled egg. I mix a little mayonnaise, sweet relish, ground mustard or grey poupon, salt and a little pepper to taste, fill the egg white halves and sprinkle a little paprika on them.
