Get McCormicks, "Salad Supreme Seasoning". You can use any kind of pasta, and any kind of vegetables you want. Also 8 0z. Of italian dressing.
Make it the night before so all of the seasoning has time to really get into the pasta. Serve cold.
There is a recipe on the bottle.
When I make it I use spaghettie, green onions, tomatoes, cucumbers, bell pepper. As you said the mom does not like bell pepper and raw onion so just put in what ever you like.

Here is a pasta salad the that we really like. We use Baby spinach instead of romaine lettuce.

Chicken, Rice and Fruit Salad

A chicken salad with rice and assorted fruits.

Ingredients:

5 1/3cup cooked long grain brown rice (or white rice)
10 2/3tbsp chopped parsley (or 2 teaspoons dried parsley)
2 2/3tsp black pepper (ground black pepper )
1 1/3medium garlic cloves, finely chopped

4 Serve cold on a bed of clean lettuce leaves, if desired.

I make a pesto pasta salad using fusilli or rotini pasta mixed with Buitoni's pesto sauce (in refrigerator section at store), then add diced tomato, and sometimes sliced, grilled chicken or shrimp. It's super easy to make and even my kids love it!

If you want an easy and simple pasta salad, try using angel hair pasta. Throw in some frozen peas (steam them first) and scrape some shreds off of a carrot. Then mix it all up with Ranch dressing. YUM!

Target Archer Brand pasta, I believe it is called Tuscan Garlic & Basil Italian, it is FABULOUS!! I hosted a baby shower a few months ago and served it with my homemade chicken salad and everyone went crazy! It is super easy to make and costs around $4 a box. Good luck!

I made this recipe for Pokeno last month - everyone enjoyed it and asked for the recipe. Just leave the onion out - plenty of flavor without it.

Pasta Salad

4 C penne pasta (box – 16oz?) cook al dente
½ C red onion
2 pkgs sun dried tomatoes – cut in strips
1 box cherry tomatoes – cut in half
1 container feta cheese with basil and sun dried tomatoes (I think the brand was Althena –
it was in the specialty cheese area.)
Marie’s Light Creamy Caesar salad dressing

Mix together and refrigerate to let flavors blend (can be overnight).

Laura’s notes:

I only used 1 package of sun dried tomatoes. I think my packages were larger than my sister-in-law’s. Mine were about a 4” square. Also my dressing was not light – they didn’t have any of the light in the store and I didn’t have time to go looking.

I'm not a pasta salad fan, but this amazed me when a friend made it recently:

cook orzo in chicken broth, drain
add
pesto sauce
kalamata olives
chopped onions
chopped green onions
chopped bell peppers (orange and yellow)
balsamic vinegar
marinated artichoke hearts
capers

cover with shredded parmesan cheese

I made a couscous type salad, but it was a greek salad, with feta cheese and tomatoe and olives (the kind you get that are in oil at the store you purchase by the pound). Very, very yummy and light.

Another idea, may be to get the different color pasta bows, cook and drain, add some light italian dressing, tomatoe, olives, small cheese cubes or pieces.

Hope this helps.

I don't have any great recipes for pasta salad but I do use the web site Allrecipes.com quite often. Read the comments/suggestions from those who have tried the recipe (in the review section at the bottom). I've had great luck with this web site.

Good luck and have fun!

imake one that can be eaten hot ot cold.
a box of cavatelli pasta
a backage of sweet italian links broiled and cut into circles
1 zuchini cut into half circles and boiled with a couple of cloves of slied fresh garlic
toss it in some olive oil with fresh choped basil a little salt and pepper
add small fresh mozz balls and whole grape tomatoes or halfed cherry tomatoes and sprinkle with fresh grated barm

I know cold italian sausage might sound weird but everything mixed all together works really well.

There is a great salad I make using rice a roni, Marinated artichoke hearts curry powder and mayo. It is always a hit. Paula Dean made it last week on her food network show so it will be easy to find the exact recipe. I think she put shrimp in hers but I just make it as a side dish. I have made it with turkey as a way to use up left overs after Thanksgiving. I have made it for so long that I no longer use a recipe I just throw things in so you will have to look it up.
