I think a oatmeal cookie is pretty good? I like to put dried cranberries, maybe white choc chips and walnuts in them.
I have thought about making some cookies with my son to give out as gifts. However, our family is working on improving our eating habits, so I want to carry that over into the treats as well.. As such, I am looking for delicious, yet easy, recipes for some cookies that are not quite so high in fat and sugar. I also want to go with more natural ingredients, so that means... NO Splenda.
Also, if you have any tips on how I can make traditional recipes healthier, please let me know.

Can't you replace oil with an equal measure of applesauce? I think I've heard that. Obviously, I don't make the healthy version!

I make vegan chocolate chip cookies. Use 1 Cup wheat flour 1 Cup oat flour vegan chocolate chips about 1 cup, 1/4 cup applesauce in lieu of butters or oils, 1 cup water, 1tsp vanilla and 1 tsp baking soda. I also make oatmeal cookies with raw honey as the sweetener. All natural peanut butter cookies can be easily made with rice flour, vanilla and peanut butter. You can of course use all-natural white flour in place of the others in any of the above recipes.

These are a ginger/molasses cookie and they disappear like no tomorrow! I don't ever use pastry flour, I just use the substitution suggested in the directions.

my husband made choc. chip cookies with pumpkin and they were tasty you could taste a hint of pumpkin in them
