Hello! I am looking for a delicious, healthy, breakfast bar recipe to make. We are a family on the go most mornings and I was looking for something that the kids and I can eat quickly or take with us in the car. I was hoping to find one with dried fruit in it. Thanks in advance for your help!

Peanut Butter Granola Bars:
1 cup natural peanut butter
1/3 cup brown sugar, tightly packed
1/2 cup honey
1/3 cup non-hydrogenated margarine
2 tsp vanilla
3 cups slow cook oats
1/2 cup coconut
1/2 sunflower seeds
1/2 cup raisins
1/4 cup ground flaxseed
1/2 sliced almonds
1/2 cup chocolate chips (I use the mini-chips)
Preheat oven to 350. Cream peanut butter, brown sugar, honey, margarine, and vanilla together until smooth.
Add oats, coconut, sunflower seeds, raisins, flax meal, almonds and chocolate chips. Mix well. Pat into a 13 x 9 glass (sprayed with cooking spray)baking dish. Bake 20-25 minutes. Cool on rack. Cut when cool.
This is a high energy bar that's low-glycemic (won't spike your blood sugar), great after workouts and sports.
Yummy!! These are soooo good that I made two batches within one week of each other and gave some to my son's baseball team and my sister who just had a baby. Enjoy!!!!!

This is so easy. Fruit and Oat squares.
1 C flour
1 C oats (I use old fashioned)
3/4 C brown sugar
1/2 tsp bake soda
salt
cinnamon
1/3 C butter
3/4 C of any flavor of preserves or get creative and add anything that isn't too runny
Heat oven to 350, use a sprayed baking pan
Combine flour, oats, brown sugar, bake soda,salt, cinnamon. Mix, then add butter. RESERVE 3/4 c of mix for topping. Press the remainder into pan, bakefor 5 to 7 mins, take out spread preserves(or whatever) onto crust. Sprinkle reserved mix on top. Bake another 10 to 15 mins. Let cool, cut into squares!!!! Yum Enjoy!!
My kids love these muffins. I often fix them for breakfast.
Pumpkin Chocolate Chip Muffins
1 1/2 c. flour
1 1/2 c. wheat flour
1 1/2 c. sugar
1 1/2 t. baking powder
1/2 t. salt
1/2 t. soda
1 1/2 t. cinnamon
1/2 t. nutmeg
1 egg
3/4 c. egg substitute
15 oz. can pumpkin
1/2 c. applesauce
1/4 c. canola oil
1 c. chocolate chips (I use the mini ones)
Combine 1st 8 ingredients. In another bow, combine egg, egg substitute, pumpkin, applesauce and oil. Stir into dry ingredients until just moistened. Stir in chocolate chips. Bake at 400 degrees for 18-22 minutes. Makes 2 dozen.

Shaklee has "meal in a bar" balanced with all that you need to replace a meal. They have 2 flavors - peanutbutter/chocolate chip and almond berry. Very tasty and does the trick with all the nutrients of a meal. Let me know if you have any questions. Good Luck\

Here's a link to a bran muffin recipe I like. You can monkey with it quite a bit (add 1/2- 1 cup of oyur choice of dried fruits or nuts, change the flour to whole wheat, change the oil to applesauce, add seasoning (cinnamon, pumpkin pie spice, molasses, etc). It's a great basic recipe and the reviews have some good ideas of things you can change/ add.

I think there's a recipe for bars in the book What to Eat When You're Expecting. I haven't tried it, but the recipes are very health conscious. Maybe you could try your library?

I recently tried a website recipes.com i found a recipe for granola, on there it has you baking it on a cookie sheet, i found if you bake it in a smaller & higher sided pan it makes it into granola bars. i bought indiviaual packets of dried fruits to put in it & they were gone in a matter of hours. good luck, hope it helps.
