When I was pregnant, I didn't get gestational diabetes but I craved a lot of broccoli.
Anything with broccoli in it, I could not get enough of it.

Hi Moms -
I am border-line gestational diabetic, so my doctor has put me on the Sweet Success GD diet (grumble). I'd love to hear some good meal ideas from moms who have gone through this before. I am only 13 weeks, so I will be on the diet for a long while. In particular, I'd love some thoughts about good snacks that are easy to pack, dinners that are easy to make, and any "convenience foods" (such as frozen entrees) that fit the GD diet. BTW - I rarely if ever eat pre-made frozen dinners - I just need something fast for the freezer. To complicate things further, any pre-made stuff needs to be vegetarian. Finally, because of my son's nut allergy, we can't have nut products in the house. Thank you in advance for some tasty advice!
ETA - I've already had a very helpful educational session with a registered dietician, so I have some ideas. I'm really looking for more about "quick" foods that I can make in a flash or take on the go. All thoughts on this welcome! Thanks!

Check if your insurance will cover a visit to a nutritionist. If it will, ask your doctor for a referral. That was a lifesaver for me!
best thing to ever happen to me during my bout of gestational diabetes: a dr-sanctioned trip to the hospital's dietician/nutritionist!
Saved my life. Kept me off of insulin! & was easy to follow, without feeling hungry or deprived.
Switch to the no-sugar-added products for sweets. Don't try to go without satisfying those cravings.
AND I still follow the recommendations for bedtime snack: simple graham crackers + a glass of milk. This is a powerhouse snack, with complex carbs in the graham crackers....which means it will carry you thru the night!
Frozen chicken breasts were my go-to dinner item. Sorry! No vegan ideas from me. :)

The site that B listed has actual menus for meals and snacks. It looks like what you're asking for.
Keep lot of cut up fresh veggies on hand. You can eat them raw, with or without dip, or quickly steam as a side dish.
Grilled chicken breast is great. It's lean. You can slice up and put on a sandwhich or wrap. Cut in cubes and add to a salad.
Apples and low fat crackers are great snacks to take anywhere. You can make your own trail mix or chex mix and store in an airtight container.
Make a large pot of vegetable soup and freeze.
Check out weight watchers for your convenience frozen meals.
Instant oatmeal makes a great breakfast. Add raisins, apples, or bananas.
