I am writing a cook book. Try this out.

Chicken cordon bleu

4 skinless/boneless chicken breasts
Ham
Swiss cheese
Bread crumbs
Milk
Tooth picks

pound the chicken breasts flat (see video)
put 1-2 slices of ham and cheese in the chicken. Roll up chicken and “pin” with a tooth pick. Dip in milk and roll in bread crumbs.
Bake at 350 for 40-45 minutes.

If you like pulled pork this is an easy one. Take a cheap pork shoulder with a bone and put it in the crock pot with some water and some chicken bullion. Make sure the pork is covered. Cook it on low all day,like 10-12 hours. When it is done it will come off the bone. Take it out and the fat will come off. Seperate the meat from the fat and the bone.Take the meat,put it in a bowl and mix it with some barbeque sauce. Serve it on a hoagie roll or kaiser roll with a slice of provalone cheese. Yummy

I just made some stuffed turkey thighs last night! I fell in love!!!

I took 2 turkey thighs, pulled back the skin and stuffed prosciutto and motzerella cheese inbetween. Then closed it up and push tooth picks through the edges to keep it closed. Then I drizzled a little worchestersire sause overtop, lots of garlic sault, and some italian seasoning. I roasted it in a 350 degree oven for 1 hour.

It was AMAZING!!!

AWESOME idea!
Ceviche tacos, Spanish rice and black beans. For the ceviche I use the cooked shrimp seasoned with salt/pepper, juice of a couple small limes, cilantro, onion and tomato. The corn tortillas I like are the extra thin mission ones.

White Chicken Chili!!!!

Crockpot:

3 chicken breasts (fresh OR frozen)
1 carton chicken broth
1 or 2 jars of salsa
1 48 oz jar of white beans

cook on low for 8 hours (or on high for 4 hours)
Shred chicken.

If it's too "watery" for you, add about 1 cup instant brown rice...let sit for 10 more minutes.

Add shredded cheese and serve...YUM!!!!!
Super-healthy, too.......a large bowl is usually less than 400 calories!! :-)

Second idea: Home-made tacos. (my personal favorite!)
Third idea: whole wheat pancakes with fresh berries & heavy whipping cream

My stand-by is to raid the freezer and pull out a variety of tupper containers with various left-overs in them. It is amazing how well those blend together when combined into a big pot and turned into a stew! LOL
My family loves them, too, and it is always totally original, because we will never again have that exact combination and mix of various dishes. Add some fresh bread or crackers and you're good to go.

If I look for more specific inspiration I like http://thepioneerwoman.com/cooking/. She has some fantastic dishes on them, some more complicated, but many very basic and with stuff I usually have in my pantry and fridge. And she has really nice step-by-step instructions with photos on her web site, but you can also print it out in a more concentrated form, still step-by-step.

If you are on facebook, search for Be a Flexitarian, they also have some great recipes.

Quiche... super easy (if you use a premade crust) and a great way to get rid of stuff in your fridge! We're having one tonight and my family loves them. Add a tossed salad and you're done!

During the summer, I like to do stuff on the BBQ grill. We try to do as much as we can then just eat on it all week. The other thing I try to keep in mind is meals that do not require heating up the kitch. We do stuff in the crockpot also.
On the BBq, we do chicken, burgers and sometimes hotdogs or brats. You can use the cooked meat in other things like chef type salad, burgers or hot dogs cut up in pork and beans. We also do sandwiches like BLT's, sub style sandwiches, or lettuce leaves with sandwich meat, cheese, tomatoes rolled up in it instead of bread.

BBQ chicken in the crock-pot

Put chicken in the crock pot, add sliced onion, and a thinly sliced lemon.

Mix together 1 bottle bbq sauce and 3/4 c cola.

Pour over chicken and cook!

I've never made this, but saw it on a video and it sounded yummy!

I love this one because it's easy but reminds me of a pot pie :-)

1/2 lb of Chicken Breast, raw
1 can of Campbell's Cream of Chicken Soup (98% fat free)
1 can of Healthy Request Cream of Mushroom Soup
2 soup cans of water
1/2 bag of frozen Mixed Vegetables (1lb bag)
1 small onion
1 tablespoon of minced garlic
1 can of Biscuit, plain or buttermilk, 8 biscuits
Salt and pepper to taste

Spray crock-pot with Pam and cut chicken breasts into halves, place chicken on the bottom of the crock-pot.

Dice up onion and mince garlic; add to crock-pot along with cream of chicken and mushroom soup, 2 soup cans of water, frozen mixed vegetables, mix together.

Cook on high for about 6-8 hours, 2 hours before serving, cut biscuits in strips or into quarters, set on top of soup mixture or mix everything together.

One frozen Jennie-O ham
1/2 bottle BBQ sauce (I used honey BBQ)
3/4 cups hot water
1/4 cup apple cider vinegar

I heated the BBQ sauce, water, and vinegar so it was thinned. I added that and the frozen ham to the crock pot, put it on low, and let it cook all day.

Chicken breasts
1 packet taco seasoning
Water

Throw the chicken in the crock pot, cover with water (I put the taco seasoning in some warm water first, then filled the rest of the way with cold), then set it on low.

*My kids both love grape jelly meatballs. I just throw in a jar of grape jelly (I use sugar free), Heinz 57 sauce (if you don't have that, you can make sauce yourself with 2 cups tomato sauce, 2 tbs apple cider vinegar,1.5 tbs chili powder, 1 clove garlic (minced), ¼ cup brown sugar ), some garlic, and frozen meatballs. Throw them in the crock pot, and they're done in about 4-6 hours.*
