Hi All - We've just purchased a crock pot and I'm looking for delicious, healthy, easy meals we can make in it! I don't trust recipe books, I want to hear from people who actually eat and love the food they make :)

My recent favorites....(DM me if you want a better receipe)

- Ham and Bean soup using left over ham bone
- Pulled BBQ Chicken
- Apple sauce...love this....core 8 apples and throw in with skin on and just add 1 cup water about a tablespoon on sugar (if using tart apples), a tablespoon or two of honey, couple shakes of cinnamon.
- chicken with veggies (carrots, celery, potatoes)

1) Salsa Chicken - put chicken breasts (4-8 depending upon size) in first, sprinkle with taco seasoning, add a can of cream of mushroom soup, a cup of your favorite salsa and a can of drained beans (I use black). Cook on low all day. Shred chicken & mix. Stuff into tortillas or eat by itself.
2) Put a pork roast or chicken breasts in, pour your favorite bbq sauce over. Cook on low all day. Shred & stuff into rolls.
3) Put a pork roast and veggies (I use potatoes, celery, onions, carrots) in. Sprinkle with Lipton Onion Soup Mix. Cook on low all day.
4) Put frozen meatballs in (I use turkey ones). Pour spaghetti sauce over them. Depending upon how many you cook, and how hot your pot gets, it may only take 1/2 day on low. Make meatball sandwiches.

I also love to do soup in the crock pot.
last week i dumped a few cans of minced clams including the juice, chopped red potatoes, onions, garlic, a pint of cream and a pint of milk into the crock pot on high for three hours and it was Clam Chowder and SOOO yummy! i love how the smell just fills the house!

Best and easiest. Diced potatoes and carrots (or veggies of your choice) with 2 tsp italian seasoing, then on top of the veggies a whole chicken seasoned with garlic, pepper, salt, and paprika. Add 1/4 cup white wine or chicken broth, cook on low for about 4.5 hours) its so good!

Veggie ratatoulie: 1 can chickpeas, 1/2 a diced onion. 1 each diced red and green pepper, 1 can tomatoes, 1 can tomatoes sauce, 2 med zuchinin, 2 med eggplant that have been lightly sauted with oil, pepper and salt. Add all ingredients and cook for 5 hours.

Pork shoulder or pork roast, a little liquid smoke and a bottle of bbq sauce. Shred with a fork for great pulled pork.
Beans are great made in crock pot. I like black or pinto, with a little chicken broth, a piece of salt pork or hamhock and spices - cumin, cayenne, garlic, salt and pepper.
Soups are great
layer potatoes, carrots and onions, put a whole chicken on top, seasoned well. the chicken juice drips into the veggies to cook them with wonderful flavor

Super easy! Put chicken in the crockpot and pour ANY jar of salsa over it. It will be easy to shred and put into tacos after several hours of cooking. I use skinless boneless chicken but you could use anything you want. It makes the yummiest easiest chicken tacos you could ask for. And my kids love it!

They have great crockpot recipes. Put crockpot or slow cooker in the search engine and then sort them in order of popularity. The members actually get on there and rate what they have tried and also list any tips they have or changes they have made. I have gotten a million recipes from there.

one of the easiest things I do (and its healthy) is put in bone-in chicken pieces and throw salt, lemon sliced and garlic cloves on top. Simple and yummy! Its good with all breasts or a mixture of whatever you have. I also cook whole chickens in the crock all the time. Just season like you would for the oven and crock it! So good, cheap and healthy.
