I currently do not have a range-or a kitchen (total re-model), but did get a crock-pot for Christmas. It is a 6-quart crock pot. I have done some research online, but I was hoping to get some nice recipes from you mommies... The things that are making it difficult for me to find recipes are my requirements (although I know there are probably TONS of recipes that cater to my "wishes").

My requirements are as follows:

a recipe that is for a 6 quart... I have found many for 3-4 quart ones, but since I'm new to crock-potting, I don't know how to adjust cooking times, etc...

One that requires little prep time, because I have little prep space (no kitchen)... preferably NO meat preparation. I wanna just plop the meat in and cut it AFTER cooking time, if needed.

Also, a recipe that does not require me cooking something else in addition to the meal in a separate pan/skillet/oven.

Of course, fairly kid-friendly. BUT if anyone has a good curry recipe for just my oldest daughter, husband and I- We LOOVE Indian and Thai curries- that is very much welcome! Our other girls will come around one day:)

Can't help you with the curry, but here are a couple of my go to easy crock pot recipes:

1. put a whole chicken (oven stuffer roaster) into the pot with about 2 cups of water then season chicken to taste-I use Montreal chicken seasoning, usually. About 1/2 hour before dinner, I pull the chicken out of the broth & remove the meat from the bones, putting a full bag of noodles (Kluski are best!) into the broth & changing the setting to high. Throw in as much of the cut up chicken as you like & let the noodles cook/broth thicken...very tasty & so easy.

2. You can put a ham in there, too-add a little OJ & brown sugar if you'd like.

3. Some of the cheaper beef cuts cook up nicely-flank steak covered with just some black pepper and a can of cream of mushroom soup makes its own gravy. Yummy over rice.

4. Thick pork chops or a pork roast-wrap in foil with some cut up onion, brown sugar, oj)...after cooking, shred meat & add a jar of bbq sauce-serve on buns.

EASY pot roast - take a giant piece of beef (few pounds... I usually have something in the freezer and I do throw it in frozen so literally NO meat prep). Dump a can of cream of mushroom soup and two packets of onion soup mix on top. Add a cup or two of water, cover and cook till fork tender (if frozen, that usually takes me about 10 hours on high though I like to cook it even longer)... flip it over every once in a while (like after 6 hours) to really cook evenly... usually after the first flip I like to take packaged frozen vegetables (Safeway has "stew vegetables" and I use two of those) and dump over the top. Everything will meld nicely. If you need other ideas, let me know but this one I have off the top of my head because its nice to pick at and is tasty over top a piece of toast or under a pie crust (like a sheppards pie). You can make the pie crust in a toaster oven if you have one. But I use my crock pot 4 times a week and have some great crock cook books! OH! There is also the blog:

ADDED: just read some of the other responses. Kristy who cooked up the chicken... I do the same except I shread the chicken and throw it back into the pot and reseason (after cooking it) over the top with a southwestern seasoning (like the pampered chef southwestern seasoning). Then cook it another half hour to an hour on low just to let it mix. The shreaded meat is awesome for fajitas...

I also have a 6 quart crock pot and this is my favorite recipe. All you need is the crock-pot, a can opener, a spoon and a knife.

Mom's Rainy Day Chili (none of this has to be exact and it all turns out delicious)

2 lb hamburger (crumble into pot raw)
1 huge can dark red kidney beans (I think it's 44oz or something like that)
1 lg can diced tomatos
1 very small can chopped chilis (found in the mexican food aisle)
1 reg can tomato sauce
1 reg can tomato paste
1/2 cup water
1/2 green bell pepper (diced)
3-4 slices white onion (diced)
2-3 tbsp. minced garlic (my grocery store sells jars of pre-minced garlic, makes it super easy, I just use a regular spoon to measure)
salt, pepper, seasoning salt, dried crushed red pepper (from the spice aisle), chili powder (all to taste, just go easy on the chili powder and crushed peppers if your kids don't like spicy food)

Put everything into the crock pot, stir until appropriately uniform and cook at HIGH for 4 hours or LOW for 8 hours, or until meat is cooked and onions/peppers are tender. Serve however you like chili. (I serve it on hot dogs, mixed with macaroni noodles, mixed with rice or plain with sour cream and shredded cheese.)

This recipe feeds my family of four for three to four days, lunch and dinner, depending on how I'm using it.

You also might want to consider picking up a rice cooker/ veggie steamer, the kind that you can use for rice and veggies at the same time. They work great and really cut down on stove top prep. You can even cook a healthy, whole meal (other than chili, which is a whole meal by itself) with just these two appliances (the crock pot and steamer), think a pot roast with a rice and veggie jumble on the side.

Hi i nake a great non- spicy chilli in the crockpot. I just add 4 cans of chilli with meat, 2 cans of tomato sauce, and 1 can of kidney beans. Then let it cook on low for 4 hours or high for 2 hours. When done put some frito chips on the bottom of the bowl, top it off with chilli some shredded cheese and a dab of sour cream and you have a easy dinner to feed the whole family. Takes about 5 mins to prepare. Also my dad gave me his ribs in the crockpot recipe that is so good. Put one package of boneless ribs in the crockpot on low for about 6 hours, or if you use the ones with the bones cook on low for 8-10 hours, DO NOT ADD ANY WATER TO THEM they will cook in their own juices. then add some bbq sauce about 1 whole regular size bottle and cook for another hour and a half then serve. It so easy and they turn out great.

I make a sausage casserole in the croc pot , don't do measurements I just throw it all in , I use mild sweet italian sausages (left whole), carrots , potatoe's , butternut squash , onion , canned tomatoes (chopped). All the veggies you can buy peeled and chopped. Put it all in , add water until you have enough liquid to fill half the croc pot , add some seasoning (salt , pepper and red pepper flakes) , the I cook on low setting all day (put it on around 9am and usually ready around 5pm) , then about an hour before it is cooked add some corn starch to thicken and 2 tbps of phillidelphia to make it creamy.

I have a 6 qt crock pot also. Most of the time I will just marinate some type of meat the night before, then throw it in the crock pot in the morning on low, then its done by dinner time. Sometimes I'll through in potatoes (in the morning) and onions. Or throw in some frozen veggies near the end. You can pretty much cook any meat, just be sure that it has enough water or juices to cook in. You can add any spices u want. It's really easy to use. I have some recipes if you would like to have them. Let me know and I'll type them out for you. Also no matter what size crock pot the recipe calls for they pretty much cook the same, it's all in the amount of food you put in them, thats all. So ucan use a recipe for a 3-4 qt in a 6 qt. Hope this helps you out.

I just made the most delicious meal in my crockpot and it was SUPER simple! Hope this helps and yall enjoy! First, throw in a pork roast (or really any meat you want, just make sure it isn't too big for you crockpot), add cut up potatoes around the roast (I have actually seen pre cut potatoes at a store in my town in MD, so if cutting isn't good look to see if you can find these). Pour 1 or 2 cans cream of something soup (mushroom, celery, etc) on top and add 1/2 cup of Worcestershire sauce. Put the lid on and cook on low for about 8-10 hours. The longer you leave it in, the more tender it will be. About an 30 min- 1 hour before it is done, sprinkle in some herbs (I used dried oregano and basil, garlic powder, Old Bay, and pepper. But I am sure adding in curry would be just fine ;-) ) Also, I used 2 cans of cream of mushroom soup, and it made a stew type broth that was delicious. So with 1 can there wouldn't be as much broth. If you only use 1 can cream of something soup, cut down the Worcestershire to 1/4 cup so the flavor is not overwhelming. You can also add in some frozen veggies at the end with the spices as well. Hope yall enjoy! Oh and I am not sure how old your kids are, but I have a 2 year old and she ate 2 bowls! I was shocked and thought for sure my husband or I was going to have to eat the second bowl....but nope, every last drop was gone!! :-)

My son's favorite is chicken wings with 1 jar of honey barbecue sauce and add about a 1/2 jar of honey in addition (we like it a little sweeter). I use probably about 16 wings and i have the large crock pot (i think 6 qt). Also, I use a rice cooker and can make rice, spaghetti and lots of one dish stuff in there as well. His favorite is chicken fried rice and you steam the chicken and the veggies in the rice cooker while the rice is cooking. Also, I am not the best cook and I havent been able to burn anything in either the rice cooker or my slow cooker:-) Also check out allrecipes.com. That's where i get most of my recipes from. This is a family favorite at my house. BBQ Pulled pork. Use an inexpensive pork roast. Just put in in the crock pot and add a half of bottle of BBQ sauce (whatever kind you like) cook it on low all day and when it starts falling apart with a fork it is ready. I usually pull it out to take of any fat before I shred it. Then back in the pot to suck up all the juices and serve it on soft rolls. We usually do raw celery and sliced cucumbers on the side, because we like something crunchy to go with it. Super easy. Prep time 1.5 minutes :)

My absolute favorite crockpot recipe is "Slow cooker Chicken Tortilla Soup" from allrecipes.com You can throw in leftover/cooked or raw chicken and nearly everything else from your pantry. I use a bag of tortilla chips rather than making my own in the oven. You can vary the spice if your family doesn't do well with hot things. My 2 year old eats it as the recipe states.
I noticed them some of the other responses mentioned the crockpot365 blog. She just released a cookbook called "Make it Fast, Cook it Slow" that you could get from the library. It explains some more things about how to use the crockpot (4qt vs 6qt, cooking times etc). In my experience using a crockpot, I have never had a problem with the size, particularly when using a bigger size then indicated in a recipe. To make a more complete meal, you may consider adding a smaller crockpot to your collection (you could probably get one off of freecycle) to allow you to cook a side dish and main dish separately. It's something you'd use for years to come and could help maintain your sanity at the present time.

God Bless You for making a huge attempt to do all of this cooking! I unfortunately am not a great cook, I was blessed with a husband who loves to cook but he does not have experience with crock pot (I asked :) May I suggest internet search via google or if you have some spare time try browsing at your local bookstore for crock pot recipes. I'm excited about the suggestions you've gotten - I'm going to try them out. I just got a 3QT from Target for $15 because some recipes in my 6QT get burnt up. The recommendation I've seen is that your crock pot should be 3/4 or more full for the best outcome. My experience is that recipes that only half-fill my 6QT crock pot tend to get burned.
