Cranberry Cupcakes Question

I'm planning on making cupcakes topped with cranberries to take to a gathering tomorrow night. Tell me, can I just rinse the cranberries and then drop them on top of the batter in the cups, or do they usually need some other prep?

Sorry if this question seems simple-minded; have consulted my library of cookbooks to no avail. :)

Whole cranberries are super bitter. I don't know how you would incorporate them into a dessert. Every cranberry dessert I've made either cooks the berries in sugar or uses sweetened, dried cranberries. Perhaps you can cook them in sugar first, then rinse them and add them in?

I just found this recipe for sparkling cranberries, which may be what you're aiming for - they are gently cooked in a simple syrup, chilled overnight, dried and then tossed in more sugar. They are very pretty!

H.- People where I grew up always blanched them before putting them in anything. I would cook them with honey because cranberries alone are very bitter.

I know the berries will burst when heated. They will probably sink and burst. You may end up with cranberries at the bottom of the cupcake instead of the top. If it's presentation you are after, I wouldn't go that route. Maybe mix them in the batter and top with a creamcheese icing with a raw cranberry as garnish. Or cook the cranberries on the stove with a little orange zest and juice and sugar. stir them into some cream cheese to make icing. .

I think they will be too sour-could you use craisins? Generally, if you put something in cupcakes-toss them in a little flour first to help "suspend" them in the batter

I think you need to roll them in granulated sugar first. I suspect they will still burst, so I would consider mixing them in or looking for a cranberry muffin recipe.
