Okay, other than grow green hair on terra cotta statues, what is best to do with chia seeds? I just bought a big container and plan to use them in juices (when I buy my juicer this weekend) but what else is there?

Yes, so this is what the container says:
"In addition to its high fiber content, Chia is the richest known vegetable source of Omega-3 fatty acids. It has 3X the antioxidants of blueberries, more calcium than milk, more iron than spinach, is a better protein source than beans or soy, and more!"

OMG I never knew you could eat chia seeds! (seriously) I really thought they were only for growing hair on terra cotta statues! Geez, I learn something new everyday :)

I've only used them in smoothies. Best to let them soak for about 15 minutes to become gelatinous.

I thought there might be a whole cookbook devoted to what to do with them. If there is one then it was mentioned in this article. Otherwise the article includes recipes.

You can sub them for eggs in baking! 3Tbls. ground chia mixed with 1Tbls. hot water, let set for about 10 minutes until it gels. That equals one egg. Doesn't work in ALL baked products (like quiche, custard) but good in bread and some cakes and cookies.

Put it on a canvas as a wall hanging.

Put it in yogurt. I know a woman that eats her yogurt like that.

I actually LOVE chia seeds. I mix them into my morning fruit and yogurt, make chia pudding with them, sprinkle them into soups and onto salads. They have a nice texture dry, but I love them even more when they soak up a bit of liquid and become gelatinous.

A couple of days ago, I made a chia pudding with honey and orange zest. It was so yummy!
