Okay, I have a bottle of this wonderful sweetener, but I need suggestions for it. Currently we use it in a healthier "clean" cheescake, and I use with french toast as an alternative to syrup ... but what else? I am sure there are enless options - I am just new to the use of this product.

ETA, There is no perfect sweetener, but there are options and this is one of them.

What can I do next?

I hate to spoil your excitement about agave nectar, but it's not healthy for you at all. I was thrilled when I first heard about it and then realized that it's only low glycemic in tiny (and I do mean tiny) amounts, it's highly processed and is actually thought to be on par with high fructose corn syrup or karo syrup.

I wish I had better news for you, but do some more digging into the facts behind agave nectar so you don't take a step backward in your healthy lifestyle plan like I did.

you can get some ideas on the website www.elanaspantry.com

The website is for gluten free recipes, but Elana uses Agave Nectar exclusively in her recipes. You can get a lot of good ideas on the site.

I used it in chocolate chip scones and cookies and it was delicious.

I have that too but I mostly use it in my coffee or tea. I think you can use it for any baking in place of sugar.

I agree with Sunshine. Agave nectar is very high on the glycemic index and, like she says, is on par with High Fructose Corn Syrup.

You'd be better off using organic raw cane sugar (sparingly), maple syrup (sparingly), pureed fruit, or Stevia.
