Harper’s Favorite Bacon Pecan Buttermilk Waffles

These homemade waffles combine two of my favorite things: bacon, salty meat perfection and pecans, my favorite nut(okay one of my favorite nuts, I happen to like pistachios too, but don’t tell the pecans). Waffles are great, but these waffles are breakfast perfection. When we stumbled upon a waffle maker while we were at a yard sale the kids had to have it, and I was contemplating waffle recipes the whole ride home. Everyone knows bacon is a breakfast staple, so adding bacon to the mix was bound to happen.

Round one of waffle making we tried out regular buttermilk waffles, and they were good, really good. But, I couldn’t resist trying something a little more: bacon-y. So Harper and I got u early one weekend and got to work. I whipped up a batch of buttermilk waffles but we added some chopped bacon and pecans and the result was everything we had hoped for and more! Harper’s Favorite Bacon Pecan Buttermilk Waffles are easy and bound to be a breakfast or brunch hit!


Harper’s Favorite Bacon Pecan Buttermilk Waffles Print Recipe


INGREDIENTS
1/2 cup butter (melted and cooled)
3 eggs
1 3/4 cup buttermilk
2 tsp vanilla extract
1 3/4 cup all purpose flour
2 tsp baking powder
1 tsp baking soda
1 tbsp sugar
1/2 cup chopped pecans
1/3 cup crumbled crisp bacon
Nonstick spray for waffle iron



INSTRUCTIONS
1. Bring all ingredients to room temp by pulling them out abut 30 minutes in advance

2. In one bowl combine the dry ingredients and mix well

3. In a second bowl combine wet ingredients, mixing thoroughly.

4. Combine wet and dry ingredients and mix until thoroughly blended, the buttermilk will react with the rising agents to create lovely air bubbles ensuring you have light and fluffy waffles. Do not over mix you can end up mixing the air right out of the batter.

5. Turn on your waffle iron and let it heat up. Cook batter to your waffle maker’s specifications.

6. Serve with syrup and a dollop of whipped cream and enjoy!

This made more than enough waffles for our hungry family of four. Waffle batter doesn’t hold well in the refrigerator so I cooked the excess and bagged them for freezing. When the kids want a waffle or two I pull them out and cook right in the toaster! Needless to say we are in love with our waffle maker and these Bacon Pecan Buttermilk Waffles, in fact I think I might make a batch just to freeze so I can pull them out in a pinch!
