We are roasting a pig about 50 pounds it is cut up and drained, it will be over coals how long do we cook it?

I always just cooked a whole pig wrapped in leaves or straw overnight with aromatic wood, or start it at dawn to cook all day. Falling off the bone. Our hawaii mama's though... may have much more precise info for you

I remember years ago my uncle cooked it wrapped in burlap over the firepit, but unsure for how ong-I know it was hrs at a time and was so moist and juicy. I miss it. L.:)

I went to a party once with a whole roasted pig. The host dug a whole in the ground, layered in the coal, then wrapped the pig in banana leaves. He started it first thing in the morning, probably 7-8 am and we started eating it around 6pm. It was AMAZING. I'd go dig a whole right now if the ground wasn't frozen.

And if I was anywhere near FL, I'd ask if I could bring the side dishes and join you :) Oh my, I'm salivating....Happy Thanksgiving!
