Not a website, but I learned so much from the Moosewood Cookbook. The lentil soup in there is divine, and there are so many suggestions of different ways to cook beans and other vegetarian foods. If you can get a hold of a copy or find the recipes from it online, I think you will be pleasantly surprised :)

Cumin is also used a lot in Mexican cooking, so you will get that flavor profile using it alone or with cilantro (leaves) or coriander (seeds, root). Vinegar should always be added last, not during the cooking process. And it's only a condiment, like adding ketchup to burgers. Don't put it in there if you don't like it! Beans are neutral in flavor, neither savory nor sweet, you can take them in either direction. Not adding salt to beans during the cooking process is a general rule, but lentils are an exception.
