Wheat Free Baking Ideas

Thank you to all the moms out there who gave support and ideas about my husband and how to get him well (I posted a question about reiki and alternative healing for him the other day) and I appreciate it so much. Today we had an appointment with a medical intuitive who also does reiki and many other treatments. She assessed his situation and apparently part of his issue is that he is severely allergic to wheat and even the allergist we had him tested with a few weeks back did not pick this up!!! So, basicly he is not to eat ANYTHING with wheat or spelt (its in the wheat family) or even made in a factory where its on the same equipment. And I am trying to get some ideas for baking with alternative grains and carbs such as potatoes, oats and rye specifically. I also especially need some cake and muffin ideas so we don't leave him out when we have birthday parties and the like. (Many are coming up!) I would love bread or roll recipes if anyone has as well or really anything that has been tasty and that their kids enjoyed as well. Thank you in advance for all the ideas.

So What Happened?

thank goodness we got the answers we need and my husband is working on a road to recovery. I also did a tremendous amount of research on wheat and grains so now I feel very equipped in dealing with this situation. We also started to see a medical intuitive and she plans on working with us free of charge so that will be a load off our financial shoulders. She is so awesome! THANK YOU AGAIN FOR ALL THE SUPPORT!

see a nutritionist..they are very acknowledgable in this field when it comes to certain nutrients people cannot eat. They give you great suggestions what to eat.

Hi N.-

You've gotten some great advice below. I found Whole Foods the best place for gluten free stuff. My husband is a celiac as well and cannot have anything wheat or gluten (also, be careful because they also tell him to stay away from rye and oats which can also have links to wheat). This disease can also be passed onto children. The doctor advised me to keep all wheat and gluten from my little girl until she was a year old in an attempt to help not pass this along to her. Whole Foods has wonderful pre-packaged mixes for breads, pizza dough, brownies, etc. But if you check out the freezer dept. you can also find lots of other stuff like frozen waffles. There are also a couple of brands that make gluten-free cookies too that are pretty good. Gluten is in almost everything, you really have to read labels and be very careful--even low-fat/fat free yogurt has gluten. Once you learn to work around it it gets easier. Also, my husband loves beer and that's a huge no-no. You can find sorghum beer at Whole Foods as well as a good amber cider by Hornsby's.

The Gluten Free Gourmet is a good cookbook. I also highly recommend the magazine Living Without. You can buy it at Whole Foods. Whole Foods, the Sunflower Market on Clybourn and Trader Joes have a lot of wheat free and gluten free products and baking mixes. You can also go to www.allergygrocer.com and buy really good baking mixes, breads, pizza crusts, etc.

I do a wheat-free diet also, and though I don't have celiac I find that info for them helps me out a lot. In addition to the info you've gotten so far Wild Oats is a good source for foods and mixes, my neighbors order stuff from Amazon.com groceries and there are even restaurnts now that have gf menus (Wildfire & PF Changs for sure).

Other brans I like specifically: Van's frozen waffels, Pamela's mixes, Gluten Free Pantry mixes and Tinkyada pasta. Most of those can be found at Jewel & Dominick's. Feel free to email me off list if you want to discuss further. ____@____.com

My father lives on a gluten free diet, and he has found a lot of great recipes you can make with almond flour. It's kind of pricy, but he makes cakes and muffins all the time and they are very good. The only thing he hasn't been able to perfect is pizza dough. You can get it at natural food stores, or you can order it bulk online.

Some easy ideas....

Whole Foods and Trader Joes have ready made mixes for cakes, cookies, muffins, without wheat.

Both stores also sell bread, crackers, cookies, and other types of foods made without wheat.

You are also able to purchase other types of grains....

FYI: if your husband is gluten-intolerant or Celiac, an allergy test would not detect it. Unfortunately, this condition is for life, rather than being something that can be treated with immunotherapy.

There are a couple of great cookbooks on cooking baking wheat free. Just go to Amazon.com and search for celiac or wheat-free. Sorry I can't remember any of the names but they are easy to find. Good luck.

Has your DH been tested for celiac disease? I don't think it shows up as an allergy. It's an autoimmune disorder of a digestive/gastrointestinal nature. Basically people with celiac can't process gluten. It took forever for my sister to get a diagnosis, and as soon as she cut gluten out of her diet, she felt immensely better.

Trader Joe's stores have LOTS of gluten-free products. Both on their website and at the stores, you can get a list of gluten-free products. They may also have a wheat-free list.
