What to Make Friend for Lunch?

Having a friend over for lunch.
She eats a very healthy diet.
What should I make her for lunch?
Nothing too expensive.
I was thinking salad w/diced cooked chicken, black beans, corn & tortilla strips.
Is that good? If so, what type of salad dressing?
What else can I add? I was thinking a few slices of cheesecake they have at the store. Inexpensive, sm portions.
I'm watching my money but what I've mentioned I have part of or can buy inexpensively. TIA

Wow, you ladies are amazing. I not only have some great ideas and additions for tomorrow's lunch but some additonal
ideas for other gatherings.

I will decorate the table w/nice plates, glasses, linen napkins & placemats!!! Thanks ladies!

The salad and chicken sounds great. Even the black beans, etc. Or you could just make chicken salad to go on salad greens (diced cooked chicken, a little mayo, salt/pepper, diced sweet onion, chopped seedless grapes or a tiny bit of pineapple)...

And I agree with WildWoman... if she is dieting, I'd skip that delectable cheesecake in favor of something less decadent (calorie/fat wise). Maybe a bowl of fresh cut up strawberries, and some whipped cream to put atop a slice of angel food cake. YUM! (You can make a boxed angel food cake easily... they are like $2.50 a box and all you have to add is water).

Romaine lettuce, mandarin oranges, fresh sliced apples and onion, candied pecans, blue cheese with raspberry vinaigrette with grilled chicken on the side is my favorite salad. Have fun.

A chicken salad is GREAT!! I would do a balsamic vinaigrette.
If she's a healthy eater - i would suggest fresh fruit instead of cheesecake. Like melons, strawberries and grapes...

A chicken wrap - tortilla shell - chicken strips, lettuce, tomato, black beans, corn....have ranch or a vinaigrette - give her a choice. Ranch is typical with wraps...

If you aren't sure - ask her! It's okay to ask - what would you prefer to have for lunch? I was thinking of ..... would that work for you?

Sounds yummy! Maybe no dressing or make some with sour cream and some salsa. Perhaps add a little shredded cheese and maybe sauté the chicken in a little taco seasoning to add a little spice ...

The salad sounds good but omit the tortilla strips, unless you're baking them. Otherwise, too high-fat. You could also just put out bowls with the toppings and customize your own salads. I'd look for a low-fat honey-lime type of dressing recipe online or buy one at the store. If you see the spray dressings, even better. I used those a lot when I was on Weight Watchers.

No cheesecake if she eats healthy. Strawberries are in season now. Just dice some up as a nice, healthy dessert.

I'm sure that you'll come up with something fabulous for lunch...my only addition is that I think you ought to skip the cheesecake, since a small slice of that will have more calories than probably both your lunches combined! ;) You can make some dark chocolate dipped strawberries that will be totally decadent for WAY less calories, do a fruit salad with a yogurt dip, etc.

wow, such great ideas here!
your salad sounds wonderful. i'd personally go with a homemade vinaigrette. there are so many wonderful ones, and pretty much all of them are better than storebought, especially ranch. it's funny, ranch was wonderful for years, it was my fat fat introduction to salads and raw vegetables. but now it just tastes far too heavy and thick for me to want on a lovely fresh dish.
how about making a few different fresh dressings (honey lime sounds divine), and add some delicious avocado to the salad?
i would NOT do cheesecake, yummy though it is. fresh fruit is coming into season, so chocolate-dipped strawberries would be the perfect dessert.

I had a friend make me some home made tomato soup and garlic bread once. It was amazing! I have found a good recipe too for it that is really good on pintrist. You could make the soup, bread and some salad?

Why don't you just ask her for some ideas? Tell her something like, "I know you eat healthier than I do so can you give me some ideas on what you'd like for lunch and dessert?" No harm in asking. Then if there are things she hates or is allergic to, then you will know. If she says, "whatever", then this sounds good that you listed. Good luck!

I had a friend over and bought a Veggie delight pizza. It was a take and bake from papa murphy's - I think it's a chain.

Served with salad and I made some brownies. It was just right and I think I had a coupon for $6.99 for the pizza

For that type of salad, you could do a delicious avocado or jalepeno ranch, and if you use light ranch it wouldn't be that much of a caloric land mine. As for dessert, if you can find pretty strawberries, do a quick Romanoff sauce....here's the recipe.....
1/2 cup sour cream
3 tablespoons brown sugar
1 tablespoon brandy or 1 tablespoon vanilla
1/2 cup heavy cream
3 tablespoons sugar
4 cups fresh strawberries
1 Mix sour cream, brown sugar and Brandy in a bowl.
2 In a separate bowl, whip cream until starts to thicken and add sugar--whip until thick.
3 Fold cream into sour cream mixture and blend well.
4 Serve with fresh strawberries.

Also, my mom every summer gets beautiful strawberries and/or raspberries with just a teaspoon of sugar (to bring out the sweetness) and a splash of pinot gregio wine. Delicious!

Stir Fry
Pita sandwiches
Flour Tortilla 'sandwiches' (those rolled-up types)
A nice good soup. Even if bought already made.

So, sandwiches, salad and a soup.
And some kind of beverage.

Salad Dressing??? There is SO many different types in the store.
Pick an Asian one, a typical vinaigrette, and then maybe a French dressing. 3 kinds. Then you, pour the dressings into cute petite sized bowls, put the little bowls on a nice platter, with a teaspoon with each one, and service it that way. So that your guest can ladle a dressing on her salad, of her choice. Along with that, if you have ground pepper, that is a nice added touch, for a salad. If she likes pepper.
It is about "presentation."
It makes, even store bought food, look nice and 'special.'
Serve your sandwiches on a nice round platter.
And the salad on a nice platter too, that you 'build' up.... visually. Decoratively.
And, cut the sandwiches. One sandwich made with a normal slice of bread for example, can be cut into... FOUR pieces. In triangle or square shapes. Cut off the crust, to make it look even more special. And serve on a platter for you both to self serve.

Being it is just the 2 of you, you don't need a ton of food.
You can go to your local grocery store deli, buy a bit of chicken salad filling for the sandwiches or turkey deli meat, a bit of lettuce, the bread (whole wheat or rye), buy store bought soup from the deli too, and even the salad. Easy.
It may be, that even if you made it all yourself from scratch, it may cost more, than buying it already made.

We do a salad very much the way you described, we use fresh
Pico de Gallo for the dressing.

Chop 5-6 Roma tomatoes,1 small onion and 1/2 cup fresh Cilantro. Mince 2 seeded Serrano or Jalapeño peppers and 1 clove of garlic. Add 2 tbsp. freshly squeezed lime juice and salt and pepper to taste. Mix everything together and let sit overnight for flavors to meld.

i like the ranch and salsa mixed for that kind of salad. I think that would be easy and tastey.

I also like the salad with cranberries, walnuts, strawberries, balsamic dressing and feta chs......
