i dont like the taste of deer meat most of the time, but my family loves it. So whatever i cook, i put bacon in it and it takes the deer flavor out...
Just cause I can never make a decision on what to cook. We got a bunch of ground deer meat from a friend this winter. Sometimes it tastes funny to me if I just make what I would if was ground meat. Do you have any recipes you use. Sorry if you don't like that someone eats deer. I think free meat is just fine in this economy.

OMG I love venison, used to be married to a hunter and how I miss teriyaki venison chops on the bbq!, I really have no recipes for ground venison, but would think that if you fried it with some worcheshire sauce, then maybe throw some potatoes in there as well, it might be pretty good, also, you will need to fry it in some type of oil, since there is no fat on deer meat. If you have a lot, you could take it to a butcher and he could turn it into sausage, which is really good. Maybe you could mix in some ground pork with it with spices such as oregano, basil, rosemary...and make a meatloaf out of it. Or maybe, make a meatloaf first, then with the leftovers, fry that and put it in spagehetti sauce/ or hash, with potatoes...hope this gives you some ideas...
Venison is great- my husband is a hunter and we have quite a bit of it. It's not only free but it's a very good lean meat and it's organic- chances are those deer were not on hormones :) We make just about anything with it that we would use ground beef for. The flavor may be a little different but not in a bad way-after about the 3rd time easting it you probably won't even notice. We make burgers, chili, speggetti, and meatloaf. Depending on how it was ground it may be too lean- you can buy beef fat from the butcher at the grocery store (really cheap) and mix a little in if yours is too lean and your meals are dry. I recently made meatloaf cupcakes with venison- I just used my regular meatloaf recipe and made little balls to put a muffin tin- we used mashed potatoes for "frosting" :)

I use venison a lot in my cooking. It is great and you can use it just like ground beef. Maybe it is the fact that I have eaten it all my life that it doesn't bother me. But if it bothers you too much then either mix it half and half with regular beef or you can mix sausage seasonings into it and it will mask that taste. We process our own venison and we sometimes make burger with seasonings that make it taste more like sausage than burger. But even with it seasoned, I still use it the way I would normally use burger. Good luck to you.
Is it all ground? If so, venison sausage is quite tasty. Choose the herbs you like the taste of or google some recipes for it. You can mix the herbs with the ground venison and pat out patties just like you would pork sausage. You can also use it as a substitute in chili, vegetable "beef" soup, tacos, lasagna -almost anything you would use ground beef for that is also highly seasoned. That way the seasoning takes care of the "different" taste. Be careful if you're using it in the crock pot and adjust the beef or vegetable stock or other liquid accordingly, because venison is so much leaner than beef, it can cook and dry out much quicker.

My family and I eat tons of deer meat. I have found that you have to use a bit more seasoning when cooking it to get rid of the "funny" taste. I usually add seasoned salt, garlic and onion powder, and then add either mexican, italian , or whatever spices to suit what I am making. I use it the same as if I were cooking with ground beef. I the off taste is a little too much for you, you can try to mix it with ground beef half and half. I have not personally done this but I have spoken to others who have and they actually prefer it that way.
While it does not sound appealing to me...More power to you for eating Venison! Go to Allrecipes.com....I have had tons of luck with trying new things from that sight.
we do spaghetti here ... not sure how FIL makes it though I just know we use it in spaghetti and chili too!
Love venison and always excited for hunting season to come around. I usually make chili with it. You are right sometimes it can be a bit gamey but I just add more chili powder. Very easy to make. Green peppers and onions chopped up and cook in a saute pan with one pound venison. Drain if needed. Mix in one can of kidney beans, one 14oz can of tomato sauce and one packet of chili seasoning. Bring to a boil, cover and simmer for at least 15-20 mintues. Stir every couple of minutes. The longer you simmer the more the spices will soak into the meat. I usually cook it in a crockpot all day and it comes out awesome.
Like other posts, I use ground venison in any recipe that I would use ground beef. In fact, since I've been married (going on 5 years in May) I have not cooked ground beef!! The age of the deer makes a big difference to me on whether or not it will taste gamey. If I know it's an older deer (larger and older) then I try to make sure it's used in spaghetti or cavatini or something where there is a sauce. I do like to make salisbury steak and use deer meat for that - just add the seasoning and it tastes good to me! But I have used only deer meat for a long time. In fact, when I was dating my husband, his family only eats deer meat and it took me over a year before I realized I was eating deer meat - so I figured if I had went that long and didn't notice it - I could do it!!! A lot cheaper too:)
I've heard if you let the meat thaw in a collinder so the blood drains well from the meat that might help. Rinse it also. Season with garlic salt and dales sauce for grilling burgers.
I know what you mean. I agree with adding fat from other meats such as beef fat or scrambling a strip of bacon when scrambling the venison. It definitely helps to tame the gamey flavor.
My four boys love 'deer' sloppy Joes : ) Brown your meat then add a can of tomato soup (no water or milk), a long squeeze or 2 of ketchup, half to a whole bottle of BBQ sauce, and a small can of tomato sauce. Serve over toasted bread or on a bun. I like onion slices or jalapenos with mine. The boys like pickles : )
