Hi MommyCakes---Here's a great recipe that my MIL made for my husband. The recipe calls for round or chuck cut into slices, but she would always use ground beef. I would definitely get some brown rice to have as a staple...so much healthier, but the white rice would be fine.

Beef and Green Beans, Chinese Style
1 clove garlic
1/2 small onion
1/2 lb beef (ground, round or chuck sliced thin)
1 T oil (or less)
2 pkgs frozen cut green beans
1 t salt
1/2 C beef bullion
1 T cornstarch
1 T soy sauce
1/4 C water
Mince the garlic and onion. Cut beef into thin, small slices. Place oil and salt in hot skillet; add beef, garlic and onion. Saute, stirring constantly, until meat is browned. Add frozen beans and bullion, cook over low heat 10 minutes.
Combine cornstarch, soy sauce and cold water. Stir into meat mixture and cook until liquid thickens, stirring constantly. Serve with rice. Makes 4 servings, about 175 calories each.
Note: I always start with browning the gr beef first then adding the onion and garlic. Drain the liquid and go from there. Be sure to NOT overcook the beans. It can happen quickly.
We don't eat much meat at our house any longer so the next recipe doesn't happen much cuz we don't eat big chunks of meat...usually eating it only in soups or stews. Too much meat leads to diseases so check out www.pcrm.org if you are interested in knowing more. So if I ever made these chicken breasts again, our family of 4 would be sharing 1 lb. of chicken.
With the chicken breasts, I would take and crush corn flakes or something similar. You could also use seasoned bread crumbs. Season as desired. I then took mayonnaise and spread it all over the chicken. Roll the chicken in the crumbs and bake in a 325 degree oven until juices run clear.
Corn is very yummy when 'roasted' on the stove. Take a pan at med high heat. Put a small bit of oil in the pan to keep from sticking. You can add small amounts of water while cooking if it starts to cook. Add some finely cut red pepper to saute slightly, cumin and maybe some cayenne pepper to kick it up a notch. Let the corn brown before adding remaining ingredients. Stir in some cut green onions just before removing from heat. Rally pretty.
I also go to these websites when I have no idea of what to prepare for dinner. www.vegetariantimes.com and www.eatingwell.com. Putting chicken in the search box will get way too many hits, but put garbanzo beans in, or any other smaller ingredient and you can narrow your search that way.
