Wanted: Leftover Ham Casserole Recipes

Besides breakfast and soup ideas, does anyone have any tried and true recipes for using leftover ham? I bought a large ham that I will be cooking on New Years Day and I suspect that I will have lots of leftovers. Haven't yet explored online recipes. Will try that next.

So What Happened?

Thank you everyone for your recipes. I especially loved the hash brown quiche. Easy and tasty!! Although I enjoy ham, I must say that I have learned my lesson. Don't by a 10 pound ham for 2 adults and 2 children even if it is super cheap!! Way to much but I did make use of every last bit of ham. I don't think my husband will want ham for quite some time.

What about a version of toad in the hole? Usually you make it with sausage, but I don't see why it couldn't be substituted with ham and maybe chedder cheese. This recipe will fill an 9x13 pan.

1-2 cups of grated chedder cheese, depends on your preference.
1 1/2 cups all purpose flour
1 1/2 cups milk
3 large eggs
1 1/2 -2 cups cubed ham (guessstimating here)
1 teaspoon baking powder
1/2 cup of chopped onion
salt and pepper to taste
2 tablspns. paprika would be nice with the ham too
4 tblspns. butter

Pre heat oven to 350 degrees

While oven is pre heating, grease baking dish with about 1 tblspn. of butter.

1. Sift together flour, baking powder, and spices into a large mixing bowl.
2. Toss in your cheese and onions, and make sure it is coated in the flour.
3. Create a "well" in the middle of the flour mixture, and pour in your milk and eggs. Begin whisking from the middle out until the mixture is smooth (like pancake batter).
4. Let batter rest, and take the remaining 3 tblspns. of butter and put them in the bottom of the baking dish. Let them melt in the oven while batter is resting (about 10 minutes).
5. Remove pan from oven, evenly distribute your cubed ham throughout, pour batter over the ham, and let bake approximately 30-40 minutes, or until a toothpick inserted in the center comes out clean.

ANother good one is baked mac-n-cheese with ham :)

I'm not sure what it's called, but there's a delicious pasta dish that has ham, penne pasta, alfredo/cream sauce, and peas. Yum! I don't have a favorite recipe for it (my mom makes it) but this is the basic idea: http://recipes.howstuffworks.com/shell-pasta-with-ham-and...

Oh, and jambalaya. We make a very basic version without the spicy stuff and my kids love it. You can substitute basic cooked kielbasa (Hillshire farms or whatever) for the andouille. Here's a recipe similar to the one we use: http://www.jambalaya-recipe.com/ham_sausage_jambalaya.html

this is a fav at our house. it can be made with left over ham, chicken or sausage.

1 package orida frozen hashbrowns thawed (i put them in the fridge the night before i make this)
1 cup milk
1 small sour cream
1 can cream of chicken or cream of mushroom soup
2 cups whatever kind of cheese you have we use chedder or jack cheese

all you do is mix up the ingredients in a big mixing bowl then add the potatoes last and mix well put into a cakepan size dish glass or metal doesn't matter but spray it with pam first. then bake at 350 for about 40 minutes or until it starts to get browned on top. my kids love this and you can play with it. add broccoli or corn or veggies etc. good luck hope you enjoy

Well...this is about a week late, but an idea for next time! I shred the ham and throw it in a slow cooker with sliced potatoes, a can of cream of mushroom soup and about half a stick of butter. 6 hours later you have some amazing ham & potatoes!! We have this every year on Christmas Eve. YUM!
