I would like to start making a couple of Vegan meals a week and would like to know what type of recipes your family likes the most. I know what I would eat, which is just about anything....but not so for the kids. I don't want to spend a lot of time experimenting only for it all to go in the trash. What's your favorite that you would definitely make again?

Try Robin Robertson. She has a website...globalvegankitchen. I love her. Also, have you tried nutritional yeast? Look into it.

I have 4 kids (ages 6-18) and a husband - between the 6 of us, we have 3 omnivores, 2 vegetarians and 1 vegan. To keep things "simple," I make most of our meals vegan.

My favorite, most used, most loved, most kid-friendly cookbooks are:

- Vegan Family Favorites by Erin Pavlina
- Vegan A Go-Go by Sarah Kramer

Some of our favorite vegan meals are:
- soups & chili (beans, tomatoes, greens, corn pasta/rice....) with cornbread
- salad bar (lettuce, chickpeas, sunflower seeds, raisins....)
- hummus with pita chips, cut-up veggies & fruit
- grain (pasta, rice, quinoa), protein (tofu, beans), with lightly steamed or sauteed veggies (broccoli, chard, tomatoes, etc)
- burrito/taco bar (beans, lettuce, tomato, vegan cheez, salsa, green onion, sauteed onion & peppers....)

Favorite recipe:
- Cheesy Roasted Chickpeas
Toss 1 can rinsed and drained chickpeas, 1 Tablespoon oil of your choice, 1 1/2 teaspoons, nutritional yeast flakes, 1/2 teaspoon sea salt. Roast for 30 minutes on a parchment paper lined cookie sheet in a 400 degree oven. Delicious!

Get the kids involved in getting veggies at the farmer's market or growing them yourselves and in the meal preparation. Don't forget to make dessert! :) Have fun!

I eat mostly vegan, and as a family we eat that way at home (plus eggs). We cook mostly out of cookbooks. The two main ones we use are Vegan Planet (thick 400+ page book) and Mediterranean Vegan Kitchen (green 200ish page book). Both those have pretty good recipes. We have a 2-yr-old daughter. She is not too picky so we don't have many issues about her eating food.

I have found a great blog at www.greenereating.com that has lots of recipes, tested and posted with pics, feedback etc. I haven't tried anything yet, but I am impressed with what I see. Check it out.

We are vegetarian, but I tend to do a lot of vegan just by default.

There is a GREAT website called Post Punk Kitchen, www.theppk.com. She also has good cookbooks and a fabulous vegan cookie cookbook out now.

Others are vegweb.com, you will find a lot on there. Also, most vegetarian recipes can be altered by using oils instead of butter and egg replacers.

Crock pots are easy vegan meals.....soups and stews. www.savvyvegetarian.com or www.crockpot365.blogspot.com have some.

And then www.fatfreevegan.com is also awesome.

Enjoy. although I don't think I can go completely vegan living with an omni husband, I do enjoy eating it frequently.

Looks like you have a lot of great suggestions! I'll just add that a peanut sauce tends to be a kid-pleaser. I make whole wheat pasta with shredded carrots, celery, zucchini, and peanut sauce, and my 2 year old loves it. Kind of a vegan alternative to mac and cheese :)

Hey, Jennifer!

We are a vegan and vegetarian family mix.

Our rule for cooking: substitute dairy with the non-dairy equivalent. Substitute meat with the non-meat equivalent. The rest, we leave as if it was an omnivore recipe.

This frees us up to not have to search for vegan recipes, but rather just adjust our ingredients.

Just this week (all vegan):
-made some mean stroganoff (use vegan cr. cheese)
-fried "chicken" with mashed potatoes (Morningstar chicken and vegan margarine)
-lasagna (used vegan cheese and cream cheese)

Was so hard at first, as we were looking for specific vegan recipes. My mom, an amazing cook, pointed this out and things have been a lot easier.

Maybe their favorites are adjustable?

This is a really cool site, where she tries recipes that are cane-sugar, gluten and dairy-free. It's fun and she has great stuff.
