Uncooked Mac and Cheese from Freezer?

Can I put noodles dishes made with a roux uncooked in the freezer? I make a chicken breast florentine that I would love to cook in bulk and freeze but I'm not sure how it will turn out. I'd cook the noodles, make the sauce, combine it all, but put it in the freezer raw. Ideas?

When you say put it in the freezer raw...do you mean you would not bake it, but all ingredients would be cooked?

I suggest you make the noodle al dente so that they aren't soggy when you reheat or bake. It actually should be very tasty because everything has had a chance to set.

If your chicken has already been frozen, then do not re-freeze. Health issues. If it were me, I'd cook all the ingredients and then just reheat it. Raw chicken with anything-- not too great.

Yes, I think this would work. It's actually not raw. It's just lacking the final time in the oven to meld everything together.

I can't imagine why you couldn't. I buy things from the freezer at the store like this all the time. Give it a try. I don't think it would hurt anyone unless you had left chicken out for a long time, only problem might be taste or freezer burn. Noodles have turned out fine for me. Just add a little water for moisture. However, I am not the Board of Health, so forgive my amateur thoughts.

Yes, absolutely! I do it with mac & cheese all of the time and it works out perfectly.
