Hi Moms! I am looking for crockpot recipes that you have and love. I am especially searching for vegetarian ones, but would also like ones w/ meat. I also need them to be fairly simple/quick to prepare. I am sick of trying new recipes only to have them not come out, and I know there must be some good oldies and goodies out there!

Chicken crock pot recipe,
4-6 boneless skinless chicken breasts
1 bag baby carrots
1 head or 1 bag frozen cauliflower
1 packet italian dressing mix or lipton onion soup mix
1 can stewed tomato
water if needed.
mix all together in crockpot & cook on low all day (about 8 hours) or high about 4 hours. you can use potato instead of the cauliflower or substitute vegetables to your liking but this is a quick & easy dinner that we use thru the winter.
I have two that we love:
I put a 2-3 lb. pork loin (not a tenderloin) in the crockpot, pour in a bottle of Sweet Baby Ray's Honey Bbq sauce and cook on slow for 4+hrs. I usually add some white onion chunks as well, as they turn out really sweet.
I have a pot roast one too: 3-4lb. boneless chuck roast; mix together 1 8-oz can tomato sauce, 1 envelope Knorr's vegetable soup mix and 1 cup red wine; pour over meat and cook 4-5 hrs. You can add baby carrots and red potatoes and make a whole stew of it. Delicious. Enjoy.
I have this chicken recipe that my family loves. I do a couple of variations but it is really simple.
4 frozen chicken breasts (I use boneless)
1 family size cream of chicken soup
cook on low for 6 hours
1 family size bag of frozen mixed vegetables
1 16oz. container sour cream
stir in last 2 ingredients 30 mins before serving.
I sometimes add Lipton Onion soup packet, or a small can of cream of celery soup, or substitute the cream of chicken with cream of mushroom. I also serve this over egg noodles.
I also make a chicken caciatorie (spelling wrong?) with
4 chicken breasts (boneless is what I use)
1 large diced tomatoes
1 large tomato sauce
2 tomato paste
2 bay leaves
1 sauteed pepper
1 sauteed onion
Add any seasonings you would use to make spaghetti sauce
cook for 6-8 hours on low and serve over rice.
A lazy man's lasagne
1 box of rotini
1 container of ricotta cheese
1 egg
1/8 cup parsley
1 family size jar of sauce
Mix ricotta, egg, and parsley together in a bowl.
Add all ingredients together in crock pot and cook for 4 hours on low.
Your mix should be very soupy so that the noodles can soak up the moisture.
I have lots more if you still need some.
There is a series of cookbooks called "Fix it and Forget it" that I love for a varitety of recipies. There are several editions, and you should be able to them in most bookstores.
Sweet & Sour Kielbasa
1 jar of welch's grape jelly - the large one
1 can of pineapple chunks with juice
1 jar of cocktail sauce
1 bottle of marachino cherries
1 green pepper chopped
1 onion chopped
1 to 2 packages of kielbasa (turkey kielbasa is ok to use also)
Combine all ingredients and cook for the day. The longer it cooks, the tastier it is.
I brown up some chicken (or pork) Italian sausage - don't cook them, just brown the skin a bit in a fry pan. Then put in crockpot and pour an entire jar of your favorite spag sauce. Serve with either pasta of your choice (which I freeze leftover, just add olive oil in a ziplock freezer bag) or sub rolls. The sausages are so good, you don't even need a knife to cut them! My 2 year old loves them!

Chicken & Dumplings
1 lb chicken (uncooked) cubed
2 cans cream of chicken soup
1 cup of milk
add frozen veggies ie peas & carrots (I've used mixed as well)as desired
cook for 3-4 hours
add 1 package biscuits (in the roll)cut into fours mix in and cook 1 1/2-2hrs
This is an esimated amount of ingredients I tend to eye every thing and add 2 pks rolls because we enjoy more dumplings. I also mix the dough in if you'd rather have more pot pie in style leave them on top.
We had this one last night: Chicken Broccoli Alfredo. Put 5-6 boneless skinless chicken thighs in the slow cooker along with a can of cream of mushroom soup. Let cook on low for about 5 hours. Throw in about two cups of frozen (or fresh) broccoli florets. Cook another hour. Meanwhile, cook and drain a box of your favorite pasta. Then mix the drained pasta into the chicken and throw in about 1/2 cup of shredded cheese (we use cheddar). Mix it all up and serve - delicious, and the kids love it.

This one is nice because you can use frozen chicken if you forget to thaw it first.
Crock Pot Applesauce Chicken
Ingredients:
4 frozen chicken breasts or thighs (If thawed, cooked less)
1 ½ c. applesauce
1 Tbs. dried onion flakes or 1 yellow onion chopped finely
1 Tbs. apple cider vinegar
¼ tsp. cinnamon
½ tsp. black pepper
2 cloves garlic, minced
¼ tsp. red pepper flakes, optional
Directions:
Use a 3- or 4-qt. crock pot.
Put frozen chicken into crock pot. Add onion. (If you are using the dried onion, add it to the applesauce.) In a bow, mix applesauce, vinegar, garlic, and spices together. Pour on top of chicken.
Cover and cook on low 5-7 hours, or high for 3-4 hours.
*The first time I made this, the chicken was tough. I think I cooked it too long, so aim for the shorter side of cooking time.
Another variation of the cheese soup w/ chicken:
Cheesy Chicken
Ingredients:
2 lb boneless, skinless chicken breasts
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup
¼ tsp. garlic powder
Directions:
Place chicken breasts in bottom of crock pot. Mix the undiluted soups together w/ garlic powder and pour over chicken. Cover and cook on low 6-8 hours, until chicken is tender.
* I used 4 breasts and one can each of the soup.

L., I know you already got a chili recipe, but here's a vegetarian chili I've been making that I like a lot. I basically combined the white chili and classic chili recipe from the booklet that came with my crock pot, and added a few of my own twists. I don't love onions and garlic, so I leave them out, but you can add them back in if you like. (1 small onion, chopped. 2 cloves garlic, minced). I swear, people don't even know it's a veggie chili because the crumbles are so much like ground beef.
1 tablespoon white pepper
1 tablespoon oregano
1 tablespoon cumin
1 teaspoon salt
1 to 2 tablespoons chili powder
1 4-ounce can chopped mild green chilies
1 28-ounce can diced tomatoes, undrained
1 15-ounce can garbanzo beans, drained
1 15-ounce can kidney beans, drained
1 15-ounce can black beans, drained
1 15-ounce can sweet corn, drained
1 green pepper, diced
1 package Morningstar Farms veggie crumbles (or equivalent)
Add everything to the slow cooker at once and mix thoroughly. The veggie crumbles will be frozen, but that's okay. Cover. Cook on Low 5-6 hours or on High for 1-1½ hours.
This is my Chicken Chili recipe, we all LOVE IT!! Another great thing about this is that most of the ingredients are usually in the same aisle of the grocery store.
Ingredients:
:2-3 Cups of cooked chicken shredded (I like using Rotisserie chicken from the grocery store)
:1 Can black beans, drained and rinsed
:1 Can Cannellini Beans, drained and rinsed
:1 Can fire roasted diced tomatoes
:1 small can green chilis
:2 Cloves minced garlic
:1 McCormick Chicken chili seasoning pack
:1 cup of corn fresh, frozen or canned
:Enough chicken brother to cover
Put all ingredients in the pot. Set on low and simmer away for 6-7 hours. I usully wait until the last hour to add the corn though so it stays a little crisp. Serve with tortilla chips, cheese, sour cream, etc.
