Stuck in a Dinner Rut

I am stuck in a dinner rut partly because hubby is picking and on the atkins diet. I need ideas that don't have to be low carb because I keep things on hand that are quick for him incase I want pasta :) Hubby does not eat fish, seafood, porkchops and is finicky about veggies. Our oldest will eat just about anything and our youngest is getting better. What are you favorite dishes?

can't wait for the Ipad to get here because I'm sure there is a cooking app out there :)

I know this may sound bland...but if he is on the atkins diet, maybe some food like whole grain rice or pasta with something like baked chicken with no skin. You can buy lean chicken with no skin and no bones. Just bake it in the oven with some seasoning like even Mrs.Dash. I'm not one for dieting when it comes to food--but I do watch what I eat and I LOVE whole grain rice and pasta. If he doesn't like veggies- maybe a sweet potato? Those are incredibly healthy and tastes great. Chicken would be a good beat since it is lean and easy to cook.

Another idea would be to get ground turkey and make meatballs with them. I usually just take the ground turkey add a little onion power and garlic powder to it and mix it up. Sometimes, I will make my own croutons and form meatballs and roll them in the crushed croutons. You could bake those instead of frying them. They are good with sauce or nothing at all. I enjoy them with some whole grain/whole wheat pasta.

Sorry your husband doesn't like porkchops. They are a great staple and actually healthy if you have a good selection to pick from. :) I always do the shake-n-bake porkchops. :)

I'm all about fast, healthy and making enough to have left-overs for lunch.

Something I make often is ground turkey with bell peppers, onions, zucchini (or whatever veggies I'm in the mood for) season with whatever spices strike my mood (I usually use worchestire sauce and montreal steak seasoning). I put some shredded cheese on top. Its low carb and low fat :)

Kielbasa with peppers, onions and whole grain brown rice is also another easy one that is low carb. Mix in some medium or salsa for a little flavor kick.

ADDED IDEA:

Boneless, Skinless chicken breasts marinated in Italian dressing. Bake in the dressing at 350* until cooked through (time depends on how thick they are). Then make whatever sides you desire. Use left-over chicken in a garden salad or make chicken salad with it.

Don't know about hubby but I just made chicken enchiladas with sour cream sauce and a salad for the side. Awesome !!!! PM me if you are interested in the recipe. Oh - and if you get the roasted chicken from the deli or have one already cooked, it doesn't take any time at all to put together.

Geesh, how can he eat Adkins without eating veggies and half of the meats in the world? Adkins is pretty limiting anyway. :)

Keep in mind you can always make things with a pasta or rice side for you and the kids and he can just eat more broccoli or whatever green veggie or meat you make.

Ideas..

Soups -- broth is low carb, make it meat heavy for him. Add veggies he likes - onions, cabbage, etc are great low carb options. Soups are hard to mess up. If you want it heartier for you and the kids you can pour it over rice for you. (I love chicken and rice soup!)

Roasts - Pork roasts, rib roasts, etc. Make a simple side of some broccoli for hubby, you could toss some potatoes and carrots for you and the kids in with the roast.

Omelets - There is a neat trick for having "Make your own Omelet" night/brunch etc. Start a LARGE pot of water on the stove and get it boiling. Whisk up a bunch of eggs, a little half n half and cut up the usual Omelet stuff -- cheese, ham cubes, green pepper, bell pepper, onion, etc. Then each family member gets a ziploc freezer bag - sandwich size or so. Pour in the egg mix and have each person pick which "toppings" they want in their omelet. Then you press the air out, seal up the bag and lay all of your bags in the boiling water. Every family member will get their own Omelet at the same time :) Its yummy and fun for the kids.. you can give the kids some toast or croissant as well.

Tacos or burritos - Husband can have a Taco Salad. I use ground turkey meat and cook with taco seasonings. Top with some shredded cheese, shredded lettuce, tomatoes. Serve with refried beans on either a tortilla or taco shell. There are low carb tortillas.

Meatloaf.

Turkey legs.

Roasted whole chicken - get creative, put something inside your chicken and the flavor will permeate the chicken. A lemon, an orange, rosemary, garlic.. whatever flavors you think your family would like.

This is all I can think of off the top of my head. My favorite thing to do is browse Allrecipes.com for ideas and I rarely ever follow a recipe exactly... I just use their ideas for inspirations. http://allrecipes.com/

iPad is GREAT!
my Hubby has one.
This is the App we use- "Epicurious" -which has recipes and shopping lists.
It is a FREE app.

Next, since your Hubby is a picky eater.. that only leaves beef or chicken... so what you can also do is a reverse search... doing a Google Search... in other words, instead of looking for, for example "Chicken recipes".... (which will give you TONS of recipes)... you do a search for ONLY the ingredients you actually have in your kitchen (that way you don't waste food and money). So, say you have chicken, carrots, peas and garlic in your kitchen... then in the Google Search box, you input "recipes for chicken, carrots, peas and garlic"... and then recipes for ONLY those ingredients, will come up. Thereby, you slim down your search and make it more efficient.

Or for meatloaf... right on the "Lipton's Onion Soup" mix box... there is a GREAT meatloa recipe. Even my Husband who does not usually like meatloaf... likes THIS meatloaf recipe. And it is super easy and super good, too. My whole family likes it.

OR for dinner, for him... cook Omelettes. I often, cook, omelettes for dinner. My family loves it... it is protein. And I put in it things like mushrooms, onions, bacon, arugula and things I grow in my garden.
And omelettes are quick and easy to make.

I make chili a lot. My favorite has ground turkey, chopped onions, garlic, a can each of diced tomatoes, beans (I like black beans), and corn.... and lots of chili powder, oregano, cumin & cinnamon to taste. Sometimes I make a more traditional chili, with ground beef or pork, and no cinnamon.

I make stir-fries a lot too... just whatever meat & whatever veggies you're in the mood for! Chicken & asparagus is probably my favorite combo, with some soy sauce, a bit of sesame oil, and topped w/ toasted sesame seeds.
