I've made a pumpkin/cheescake pie for Thanksgiving today so that I won't have to worry about the baking tomorrow. However, should I put it in the fridge overnight or can I leave it out? Just worried about the homemade pie crust that I am so proud to have made from scratch :)

I would put it into the fridge, just to be safe. That's what I always do with my pumpkin pies (if I don't eat them before it can make it to the fridge!).

You have to refrigerate the pumpkin pie as well as cheesecake.
I have done the same thing as you have in the past. When my kids were little we would go to my in-laws or my mothers for Thanksgiving and then have our own dinner the next day after we went to get our tree. What I would do is make all the pies, cheesecake, cookies, etc, except for the turkey ahead of time, then put the turkey in in the morning so that it would be done before we left to go cut our tree down. I left it in the oven and would carve it when we got home. After dinner we would put the tree in the stand and decorate it. So much fun. Now we have dinners at home as we have 5 kids and it is much easier, but we still go get the tree and have hot cocoa and snacks while we are decorating the tree.

i think you are suppose to put it into the fridge after it cools for 2 hours since it has eggs and milk etc in it.
You have to put it in the refrigerator. Don't worry about the crust, in my experience, it takes 2 days for it to start getting soggy. I know what you mean though, the texture is really important. You can take it out of the fridge a few hours before serving but don't leave it out.
Hi J., Hope you had a great Thanksgiving. I'm reading this on Sunday but just wanted to say that a pumpkin/cheese cake pie sounds delicious. I'm sure it did not last long enough for anything to go bad. From someone who is not a baker (except for Ziti)....good job. Grandma Mary
