Soup Recipes for Sickies!

So my two boys (2 yo and 2 mo) and hubby are all sick today and it's miserable outside - sleeting and windy. I can't run to the store but a warm pot of soup on the stove seems like a good idea (and will give us leftovers for tomorrow!). In my fridge/pantry, I've got: canned tomatoes, canned green chiles, dried beans, pasta, rice, chicken broth, potatoes, parsnips, carrots, celery, half and half, frozen spinach and corn and edamame, garlic. Maybe some minestrone? All of my meat is frozen solid...

I'd love some of your favorite soup recipes!

A tortilla or taco soup might be nice. Combine the chicken broth and canned tomatoes (with the juice they're in; and if they're whole, chop them up), with some seasonings appropriate for tacos (cumin, chili powder, paprika). Add the canned green chilis and the corn and some cooked kidney, black or pinto beans if you have them (doesn't sound like you have time to cook the dried beans). If you have ground beef you can thaw and brown, that would be good, or chopped cooked chicken. You can make it fairly mild if you like. Simmer it for a nice long time and either serve it with tortilla chips or strips of fresh tortillas that you crisp up in the oven. Or put cooked rice or pasta into it.

this soup is CRAZY effective. my men have come to beg for it when they're sick, and it's good enough to eat even if you ain't. the only downside is that everyone has to eat it cuz it's garlicky as all get out<G>.
l'aido boulido (boiled water soup)
in a pot put 4 cups of water, 1 teaspoon salt, cloves from one head of garlic smooshed with the flat of a knife (or a big fat generous tablespoon from your big jar of costco garlic if you're me). don't bother mincing or chopping the garlic, just throw that squished puppy in there. bring to boil and boil away for 10 minutes. remove from heat, add some big sprigs of cilantro (i hate cilantro so i toss in thyme or basil or rosemary or whatever is still green in the herb garden or a piece of lemon peel), cover, and let sit for 15 minutes. fish out the herb sprigs or lemon peel if you've used fresh. add a squirt or two of lemon juice, unless you put in the lemon peel.
to serve, put a piece of hearty bread- stale is fine- in the bottom of a warmed bowl. cover thickly with freshly grated parmesan cheese. ladle the very hot broth, with garlic pieces, over the bread.
major major comfort food, and packed full of healthy goodness.

Take your frozen chicken and partially thaw it in the microwave. Place it in a skillet and brown it and partially cook it. When it is easy to cut and is done enough to pull away from the bone easily, cut it into bite sized chunks and place it in a pot. Put 1 can of chicken broth in the skillet and bring it to a boil. Use a fork to rub the bottom of the skillet (or spatula if a non stick surface) until the skillet drippings are disolved. Pour the broth into a pot with the chicken. Add cut up potatoes, carrots, diced celery. Add a can of cream of chicken or cream of mushroom soup if you like. Bring the soup to a boil. If you like chicken noodle soup take some spaghetti or linguini pasta, break it up into had width lengths and cook that in the chicken soup. Serve when the pasta is cooked, but not mushy. I would also crush some garlic and add that too.

Well if they're good with milky stuff, I'd make potato soup!! Cut up potatoes into little chunks and boil till tender. In another pan, melt some butter add some onions and little cut up carrots cook till tender then add some flour to make a roux, cook for a little bit, then start adding half and half or milk, until you get a smooth soup consistency, then add in some corn and your potatoes, and whatever else you want. It is like corn/potato chowder. My family loves it. Sometimes i add chicken too. Hope everyone feels better soon!!

We like chicken noodle soup...you can throw the chicken in the oven frozen and then shred it into your soup near the end...that's how I do it. Hope you all feel better soon.

Looks like you have what you need to make chicken noodle soup! Cut up and saute your veggies (carrots, celery and whatever else) in the garlic with olive oil. Add the chicken broth and bake up some of your frozen chicken. Dice it up then add it. Cook the pasta (egg noodles if you have them) and add to it. Yum!

I also vote for chicken noodle soup! I think that I'll be making some today too. My 7 yr old daughter is fighting a cold. Hope your sickies all feel better soon.

I vote for chicken noodle soup too. Except I just boil the chicken to cook it. As long as it's individually frozen portions, just throw it in the pot, then dice it up when it's done. I like to add basil and oregano for flavor.

I vote for chicken noodle soup too!! I just made a pot this past week with partially frozen chicken legs and it turned out great =) We ate the whole pot!! My recipe is very basic and simply -

I made six cups of chicken broth (six cups water w/ 4 chicken flavored cubes) but you could use your chicken broth, chicken (I used the legs I had in the freezer - cooked it down in the soup then removed the chicken legs when they were cooked to remove the fat / bones and chopped up the chicken pieces to bite size), a bunch of carrots (peeled, cleaned and chopped up to bite size pieces), celery (cleaned and chopped into thirds since my family doesn't like celery), onions (chopped in half just for flavoring and to be removed before eating since they also don't like onions but I'd assume you could a skip those) and a two cloves of garlic (also for flavoring - yes my family is picky =)) When it's all cooked I strain the broth and just pull out the carrots and chicken to put back into the pot and simmer until our noodles are done (since you don't have noodles you could always coked the pasta but break it into bite sized pieces or the rice)!! I've also seen chicken noodle soup with bite sized potatoes and corn in it too and for some reason the spinach sounds so good to me too!! My personal favorite is lentil soup (assuming that those dried beans include lentils). Chop an onion (oops, do you have any? You probably could do without), two carrots, two stalks of celery, and two potatoes. Combine in a pot with 2 cups of dried lentils (rinsed a few times), 8-9 cups of water depending on the consistency you want, two bay leaves, 1 or 2 cloves of crushed/minced garlic, two tablespoons of olive oil, and 1-2 teaspoons salt. Cook for an hour, and add 1 tsp-1 TBSP of red wine vinegar at the end. Some thyme goes nicely too--a tsp dried, crushed up and added towards the end of the cooking time. If you like, you can toss in the chopped tomatoes too, or the spinach. It's great over rice or with bread. This recipe is based on Laurel's Kitchen.
