Hi!
I am looking for some good vegetarian recipes or a good vegetarian cookbook or magazine.
I am interested in adding more meatless protein to our diet.
Thanks for digging out some new ideas for me!

When I first went vegetarian there was a cookbook out by Better Homes and Gardens (Cooking for Today) Vegetarian Recipes that was a great intro into vegetarian cooking. The recipes were pretty easy and my whole family, including my picky dad and sister, liked them. Most of those recipes are on bhg.com but you might be able to find the book in a library. It's out of print. I also love the food blog 101cookbooks.com. Heidi, the author, has a new recipe 2-3 times a week and an extensive archive. All of her meals are healthy and fresh and not too difficult.

One of our favorite and easiest meals is Black Beans & Rice. It's really easy - but tasty and filling so my husband doesn't mind it not having meat.

2 cans black beans - drain one can
1 can Rotel (I prefer mild) drained
1/2 onion
Mexican cheese
Rice (brown or white)

Saute the onion in a sauce pan and then add the beans and rotel - and I usually add a little garlic salt. Let this simmer for 10-15 minutes. When rice is done pour some beans over the rice, then sprinkle with mexican cheese.

I also make spinach lasagna - just substituting the spinach for the meat in regular lasagna.

vegetarian times is excellent, my sister have been veggie for 20 years and keeps all of her issues! and they explain things so newbies can keep up! go online, i think they have a special offer on a one year subscription right now

In the frozen food section at Walmart, there are Soy Crumbles from Morning Star. THEY ARE GREAT!!!! Just like ground beef...but not. Relatively cheap. $3.50 for quivalent of 1 lb of ground meat. I use it in everything that I ever used ground meat in before. My kids have NO idea.
