Here is a recipe for tortilla soup that has been in my family for years. It is very simple to prepare and is even better the second day!

Tortilla Soup

1 sm onion, chopped
2 cloves garlic, minced
1 Tbsp oil to saute
1 (4 oz.) can green chilies
2 cans (14 oz.) whole tomatoes
1 can pinto or kidney beans (optional)
1 tsp cumin
1 tsp worcestershire sauce
1 (14 oz) can tomato soup
1 can niblet corn (optional)
1 tbsp fresh cilantro
1 tsp chili powder
1 (14 oz) can beef broth
1 (14 oz) can chicken broth
2 c cooked chicken, chopped or shredded
1 1/2 c shredded colby/jack cheese
avocado (optional)
lime (optional)
Tortilla chips

saute onion and garlic in oil.  combine all ingredients (except chips, cheese & avocado) in large pot.  bring to a boil.  reduce heat and simmer for 20 minutes.  in bowl, top with cheese, chips, and avocado and a squeeze of fresh lime.  Enjoy!

I have one I got off of allrecipes.com that my family loves ! I'll write it out how the recipe goes and then tell what changes I made:

9 c. chicken broth
6 cloves roasted garlic
1/2 c. chopped tomatoes (I use canned)
1/2 yellow onion, chopped
2 fresh jalapeno peppers, sliced into rings
1 tsp. dried oregano
1/2 yellow onion, sliced
2 cups shredded, cooked chicken meat
1 lime, juiced
6 (6 inch) corn tortillas, cut into strips and toasted for garnish

1. In heavy pot, bring the broth to a boil. Add garlic, tomatoes, chopped onion, jalapeno, and oregano to the stock. Simmer uncovered for 30 minutes.
2. Broil the sliced onions until soft and a little brown. Add broiled onions, chicken, lime juice to soup and simmer till chicken is heated.
3. Place toasted torilla strips in each bowl & pour soup over strips.

Ok - my changes - I chop and saute an entire onion and add it to the intial stock and just skip the sliced onion. I also deseed the jalapeno's just because I don't like really spicy things. And we just use tortilla chips. I also use about a cup of tomatoes (about a 14-15 oz can). And if you have alot of chicken in it, you can add more broth.

We also use diced avacodo's and Monterry Jack cheese (grated) for garnish. The cheese melts so good.

This is a great soup !!!!

Instead of Taco Bell Salsa, I use my favorite brand, Texas Texas.

Have you ever tried Homemade Gourmet? I bought a bunch of packets of different things online on their website(one is the tortilla soup). My son and husband LOVED their tortilla soup and and all I had to do was add diced tomatoes and water to the mix! Here is the website and the direct page with the tortilla soup. Chicken Tortilla Soup

Chicken breasts
Salt
Zucchini
Pepper
Carrots
Chile powder
Celery
Garlic
Onion
Cumin
Peppers
Half & Half
Fresh cilantro
Velveeta cheese
Diced Tomatoes (with juice)
Corn tortilla strips or chips
Frozen Corn
Canned Black Beans
Chicken bouillon cubes

>Use as much or as little of each as you like. Just make it to suit your taste.
Boil Chicken in water, take out and dice. Leave water in pan.
Cook raw vegetables until almost tender in water while chicken is cooking.
Place diced chicken, veges and tomatoes in reserved water. Add remaining ingredients to taste. As it cooks it will thicken some, so just add additional water and half and half as needed. When serving, add tortilla strips or chips.

**I usually just use the vegetables I have on hand. It’s great will everything, but I rarely have all the ingredients. Also, I’ve made it without the half and half and used cream of chicken soup to thicken it a little.

Here is our family receipe. Everyone loves it!

INGREDIENTS:

1 pound of chicken, boned, skinned and cubed (I have used 3 large cans of white meat chicken when in a hurry)
2 cups of water
4 cups chicken broth
1 large onion, chopped
2 cloves garlic, (use garlic press if you have one)
2 cans of rotel
1 large canned of diced tomatoes
½ can of corn (drained)
1 can of black beans (drained)
1 tsp salt
1 tsp pepper
1 tsp lemon pepper
2 tsp Worcestershire sauce
1 tsp chili powder
1 tsp cayenne pepper
1 tbl Tabasco sauce (optional)
¼ cup of all purpose flour mixed with ½ cup of water

Shredded Monterey Jack cheese, a little for each serving to garnish
Tortilla Chips

PREPARATION:
Bring the chicken to boil in water and broth. Cook for 15 minutes. Add remaining ingredients and let simmer for 30 minutes. Serve warm.

I don't have a family recipe..but it's really good! It's a mix (I usually don't get into those) but it's the Tortilla Soup by Bear Creek. It is awesome and I always get good reviews from my family. All you do is add chicken....it's tasty and a GREAT quick fix.
