Sauce for Pasta...

need a quick/easy recipe using things that i'm likely to already have in my kitchen... throwing together some things in the kitchen that need to be used - spiral pasta, chicken breast, zucchini, gold bell pepper, red onions - what type of sauce? pref not tomato based.. thanks!

I would sautte the veggies in the pan with garlic, salt pepper olive oil and italian herbs. Let the veggies sweat a bit. Remove veggies and set aside. Leave all the juice in the pan, deglaze with butter and white wine. Let the wine reduce. Add veggies, cooked pasta and a little pasta water to the pan.l

you can make a chicken sauce. Melt some butter in the pan and add some flour and stir. Throw in some chicken broth and stir it up till it's bubbly and if you want you can add some cheese to make it a little cheesy. If you con't have any broth, do you have bouillion cubes? You can make a broth with that. Or you can omit the chicken broth and use milk and make a cheesy sauce. You can sprinkle in some red pepper and make it a little spicy too. You can also use cream cheese with it too to add a different flavor.

I like to make a quick pesto sauce for my kids but I use either spinach or arugala with the basil. They eat it don't even know they are getting an extra veggie. I usually only add the pine nuts in for hubby and I because they don't like the texture.

We make warm "pasta salad" and use everyone's favorite dressing. Your ingredients sound yummy and very similar to what we use! I cook the pasta, grill the chicken, and heat the chopped up veggies (steam or quick boil). Then I would use balsamic vinegarette, my son likes italian, and my husband uses ranch or honey mustard. One of our favorite and HEALTHY meals.

My kids aren't crazy about tomato sauce, so I just use a little olive oil and some parmesan cheese.
