I have tons of salmon in the deep freeze, and I would like to use it to make a dish but we are burned out on just eating salmon. I am looking for a soup/stew or something else I can use the salmon in. What's your fav?

I second salmon patties. I used to use cracker crumbs and that's good but now I use Panko bread crumbs. If you want you can sprinkle them on top for a crispy coating. I use the salmon and 1 egg, 1/2 tsp Worcester, little onion powder, little pepper/salt.

What's next, someone with too much lobster?!

I like pasta with chunks of salmon, veggies, a cream sauce, capers and lemon juice. Maybe fresh grated parmesan cheese and pepper over the top....

You can add it to cream cheese as a spread (like lox) or make a mousse.

Salmon Cream Cheese Dip (for veggies or crackers)
2 cups torn up salmon
12 oz (or 1 1/2 cups) cream cheese
1 tsp liquid smoke
1 tsp minced onion (I used a microplane grater)
1 tsp lemon juice
salt and pepper to taste (I used 1/2 tsp kosher salt and 8 turns of pepper grinder)

The mousse I'll ask you to look up and find your favorite recipe!

Can you find a way to can or smoke some? It might keep longer that way and you won't have to eat it all at once. I love it, but would grow tired of it, like you have, if I ate it all the time. I know there are mom's here from AK ... Maybe they have some different recipes ... In the meantime, here are some recipes you may be able to adapt ...

If it's good salmon, try curing it. Basically, you'd be making lox. It's delicious!

Good grief, now I want salmon patties too like someone else said.....

You can also flake the cold, cooked salmon and put it in a pasta salad, much as some folks put tuna in with pasta, whatever dressing they use and anything else (celery? peas? tiny chopped cooked broccoli florets? etc.) to make a cold pasta salad that is a full meal.

I love Salmon chowder. I found a really hearty recipe for Halibut chowder that calls for carrots, tomatoes, cheese, potatoes, corn, garlic, and more. I just got it from allrecipes online. Then I altered it to fit my tastes. For a boost of flavor you can use smoked salmon. I replace the milk with heavy cream. I also add salmon to home made cream sauce with broccoli and serve it over pasta or rice.

salmon patties!
I don't really have a recipe - I just google one. Basically Salmon, bread crumbs etc, egg, onion, celery - whatever you want to put in. Fry or oven bake.
I like to serve with honey mustard - homemade, just mix honey and mustard!

Salmon salad. I like it best with romaine lettuce, a little champagne dressing, a sprinkle of Sargento shredded cheese and diced artichoke hearts.

I make darn fine salmon cakes...like crab cakes. I chop up a little onion, a little fresh parsley, mix it with salmon, real bread pieces broken off of whole wheat bread, and leftover mashed potatoes. Mix in just a little mayo and dijon mustard. Add an egg (or two if you are making a larger batch). Add some salt, pepper and old bay crab seasoning. Shape into patties and cook in some olive oil in a skillet. I serve these with dijon mustard. They are amazing. We went to Maryland for my husband's family reunion and I ended up making these (with crab instead of salmon) and all the Maryland relatives who have crab cakes all the time said they were they best crab cakes they have ever had. I gave the recipe to everyone. :) Another good salmon recipe is to make "blackened" cajun style salmon and serve it with a sweet homemade mango salsa. It's also really good in a cioppio recipe. I have made clam chowder with salmon and canned clams and it was delicious. I also love smoking salmon and making a cream sauce to serve it with pasta. We love mixing salmon with all kinds of recipes like pasta and rice. Salmon is also really nice served over a salad...grilled salmon is my favorite. Yum.

Salmon patties are nice for kids if you have small bits of salmon. Add an egg and crushed saltines, ball up the patties, and cook on the stove-top until brown on both sides.

ETA: I see I'm a second on the patties! They really are good.

I love salmon patties. Haven't made them in forever, but I used to make them with cracker crumbs, eggs, seasonings, and perhaps a bit of mustard. I would serve them with a white cheese sauce...oh, so yummy.

Alternately, you can make a cold salmon salad in much the same way you'd make a tuna or chicken salad.

I made a salmon dip with some extra salmon I had. It came out soooo good, you should try it. That recipe from an early responder looks good. Otherwise I'd mix it with mushrooms, spinach, and any other veggies on hand and serve it with pasta. Salmon patties are good too, you can make them into sandwiches.

Okay, I've just read all the responses and now I'm salivating, and wanting salmon. I wish I could trade part of your freezer full of salmon for part of my freezer full of wild boar and elk.

A favorite meal at my house is salmon chunked up in a cream sauce over spinach fettucine or penne with either broccoli or green peas. It's also good in stir-fry rice. I like it scrambled in eggs for breakfast, or in a frittata, with chopped avocado. Or, as one other poster suggested, cure some of it. You can do it right in your refrigerator, and you can learn how by googling "curing salmon." I had no idea how easy it was until my husband did it for one of his classes in culinary school.

Have you tried just using different recipes? I don't know a casserole or soup with salmon, but we eat it all kinds of ways. Our favorite is an indian spiced recipe (think I got it from allrecipes.com) or a rosemary recipe from the South Beach diet book, grilled on cedar. And I'd try switching up the sides as well. That helps too!
Otherwise, sorry to say the only thing other than "fish" I can think of is salmon patties and salmon cakes---same as everybody else.
