Inside comfort is what matters. You want them to be stiff on the outside so she doesn't roll her ankles. :-)
I want to get some roller skates for my daughter for her 5th birthday. I had the traditional skates when I was a kid but I was maybe leaning towards the size adjustable skates for her. Does anyone have them and like them? The ones that I have seen online look pretty stiff like ski boots. I really need to find a skate that will be super comfortable otherwise she won't wear them.

My daughter goes skating all lthe time and she likes the inline skates the best. Not as heavy or bulky
We have the adjustable ones for our kids and they look stiff, but they are actually pretty pliable. They are soft rubber. One really neat thing about them is that you can set how they move and how far apart the wheels are so that they can start off by "walking" then move slowly into skating forward then have the full use of the skates and knowing how to use the brake. Also with the wheels since you can move them you can work her into "rollerblade" style so that she can move directly into those if you want.
If they are the real skates with the leather boot you can have her roll around the first couple of times in wet socks. I know it sounds gross but it will break them in and be comfortable. I was a competitive skater and this is what we did to break in our new boots. We did it before we mounted them on the wheels but I'm sure you can have the same results.
We have the adjustable ones from Target and not only are they pretty well made but my daughter loves them! They are very comfortable, at least my daughter has never complained. And I love that they adjust 4 sizes because she's worn them for 2 years now.
Two of my kids have adjustable size ice skates. Neither one has said anything about them being uncomfortable. Plus, I don't have to buy new ones every time they grow into a new size!
We have the adjustable ones and my daughter LOVES them. She is pretty particular, but has been fine with them.
