Recipe Using Mushrooms

Our family does not generally eat mushrooms. I bought some for a pizza for my husband but have a lot left over and I am not sure what to do with them. The kids don't like them and I am not particularly fond of them. It would be great if I could get some recipes that use mushrooms and hide them. Thanks!

Hi L.,

I have found that if I place mushrooms in a food chopper so that they are tiny pieces and then add them to any ground beef recipe, once cooked you will never know they are there. My family has yet to discover this trick of mine and I know that I am getting vegetables into them, too. Plus, it makes the food last longer since it adds content, making an extra serving or so per meal.

Hi L.,

My recommendation is to put them in the blender...grind them up and you can add them to anything...add them to a manicotti recipe, or whatever! Enjoy!

Use them in your favorite spaghetti sauce recipe with a twist... Ground them up in your food processor, saute them WITH your ground meat and onion and no one will be the wiser and your sauce is healthier (extra protein!)

I use them in homemade chicken noodle soup. My daughter won't eat them if she knows what they are but she LOVES the chicken noodle soup I make. And there are only a few ingredients in my soup. I cook the chicken in a slow cooker. Once cooked I remove the bones, add in cooked klushki noodles or cooked egg noodles, mushrooms, onions, salt, pepper, and a little creole seasoning.

My husband and I just love them sautee'd in butter - it makes them a little crunchy and oh so flavorful. Just try a few that way and see if you like them - it's a whole different flavor. If not, use them chopped finely in a soup - even Campbell's will do or use them in a casserole.

I like to put the in fajitas or fry them up in a pan like fajitas but with sausages. When ever I have left overs, I generally will saute them up with steaks or hamburgers. If nothing else, you can put a little butter in the pan and just season and saute for a couple of minutes and make it as a side, topping for mashed potatoes or as a "garnish" on your husband's plate. Like someone else said... if you puree them, you can add them to anything and you won't notice them. Spaghetti sauce and meatloaf is a good place to add them in.

Try Beef Stroganoff.

Sautee the mushrooms in a little butter with onions. Add to 2 lbs of ground beef that has also been cooked. Place all of this in a crock pot with garlic to taste. Mix one large container of sour cream with 4 tablespoons of flour and one tablespoon of tomato paste. Cook on high for an hour or 3 hours on low. Also, add salt and pepper to taste. Serve over egg noodles.

I chop them up really tiny and put in spaghetti and lasagne. I also make an mushroom dip with soft cheese in the food processor that everyone likes. Just google "mushroom pate" recipes.

I tend to hide mushrooms in common foods that I prepare. For example, I chop them up very small and put them in tomato sauce, the salsa for quesadillas (or folded inside) or even in mac and cheese or scrambled eggs. good luck!

None of us like them either, but you can always just chop them up really fine to where no one would really notice them in recipes like Beef Strogonoff, etc.

I came up with a recipie for quesadillas that used mushrooms. I was almost out of the chicken one night and threw in some mushrooms to replace the meat and they're even better like this!

Microwave some of those frozen pre-grilled tyson chicken strips until thawed. While they're microwaving, chop your mushrooms and sautee them in some olive oil until tender. Add the thawed chicken (since they're pre-cooked, all you have to do is heat them up a bit more on the stove). Add some Montreal steak seasoning to the chicken and mushrooms.

Butter one side of a tortilla and place it butter side down in your skillet, griddle (the griddle makes for easier flipping!), etc. Spoon the chicken and mushroom mixture onto tortilla. Then place two slices of pepper jack cheese on top of the chicken and add fresh, chopped jalapenos if you like the heat. Place another buttered tortilla on top. Cook until the bottom tortilla is golden then flip and do the same with the other. The higher the heat you cook them on the crispier they'll get, but you have to watch them more closely so they don't burn. My husband and almost three year old LOVE these quesadillas. Good luck!

You could maybe try renting some books from the library, they have a book called The sneaky chef and that other book Deceptively Delicious by Seinfeld's wife. I usually put mushrooms in like pasta sauces or salads but like someone else suggessted if you puree it, it will be hidden. Good Luck sorry I don't have specific recipes for you.
