Hi Moms
I have a few 'go to recipes' that I cook alot because the whole family likes them, can use then when having guests for dinner, inexpensive and not to unhealthy. I'm just really sick of eating them. Hoping other mom's might be willing to share their 'go to recipes'. Here's my top four. Thanks and I hope these are useful to someone !
1) http://www.ausport.gov.au/ais/nutrition/recipes/survival_... (I used to puree this for my son when he was 8mths +old and he loved it freezes well in kid portions too. Not so good to freeze and then eat for adults as too mushy)

1. Easy Chicken Parmesan: Bake chicken breasts (however many you need), covered with marinara sauce, at 350* for 45min-1 hour or until juices run clear (depends on how much chicken you have). Then top with parmesan cheese (or whatever cheese you prefer) and bake another 5 minutes, or until cheese is melted. I serve with some fresh steamed or sauteed green beans, corn, and salad. My sides vary according to my mood.

2. Chicken and Black Bean Quesodillas: Cook chicken on stove (I seasoned with fajita seasoning, you can do whatever you want) til done. Cut into chunks. Fill tortillas with black beans, chicken, diced onions, diced red & green peppers, and cheese (flavor of your choice). Fold tortilla and cook until light brown (I use a small amount of buttter in pan). I serve with rice and beans, with chips & salsa as an appetizer while they're cooking. This is super easy to adjust ingredients to everyone's personal taste. I like mine with less cheese and more black beans.

One of my favorite meal ideas is super easy and healthy. I make chicken soft tacos. I just buy a rotisserie chicken and shred it. Then I put it on soft tortillas and add shredded lettuce, cheese, avocado, salsa or pico, some tomatoes and it's great. I put everything out on the counter like a taco bar and everyone serves themselves. My 2 yr old loves making her own and eating it, which is a miracle because all she ever wants is buttered noodles or mac n cheese! I usually make a rice or vegetable with it.

Here is one I just made last night....it isas healthy as you want to make it. Just sub out whatever meats...such as turkey pepperoni or ground turkey.
Also, here are my modifications.
I was pleasantly surprised with the outcome of this dish..more of a casserole. Everyone loved it...it was devoured in no time! The few changes that I made were... used 3 eggs, increased all the cheeses, added mild italian saus, turkey pepperoni, tomato, pizza sauce instead of tom sauce, garlic, oregano. This is a great, super healthy way to eat what tastes like pizza, and I love pizza...this didn't disappoint!

Also I like to make pizza with a wheat crust that is super easy

dissolve 1 T yeast in 1 cup warm water (105-115degrees F) add 1 t sugar. Add 1 t salt, 2 T oil, and 2 1/2 cups wheat flour. beat vigorously 20 strokes. Let rest for 5 minutes. (I find it is less heavy if I let it rise for a little longer so it starts to rise). Pat onto greased jelly roll pan with lightly floured fingers. Add favorite toppings and bake at 425 for 20-25 min.

Here is another great one sweet potato quesadillas recipe.

1 1/2 cups finely chopped onion
2 garlic cloves , minced or pressed
3 T vegetable oil
4 cups grated peeled sweet potato (about 3 potatoes...also I do not peel them too much work)
1/2 t dried oregano
1 t chili powder
2 t ground cumin
generous pinch of Cayenne
salt and pepper to taste
I cup grated sharp cheddar cheese (I use the colby jack cheddar mix from Costco)

8 tortillas (8-10 inch)
Slasa
sour cream

Saute the onions and garlic in the veg oil until the onions are translucent. Add the grated sweet potatoes, oregano, chili powder, cumin, cayenne and cook , covered for about 10 minutes, stirring frequently to prevent sticking. When the sweet potato is tender add salt and paper to taste and remove filling form heat. Spread one-eighth of the filling and 2 T of the cheese on each tortilla. Cook the filled tortillas...I do it in butter at med to med high heat. You could use olive oil or cooking spray too.

Per Quesadilla: 486 calories, 12.8G protein, 19.5 G fat, 66.7 G carbohydrate, 275MG Sodium, 24 MG cholesterol

Tex Mex - Taco salad, tacos, nachos, quesadillas, enchilaladas, tostadas, fajitas - all are made with meat, cheese, tortillas, lettuce and tomato and salsa - just rearanged and cooked in differant ways. So, having those ingredients on hand makes it quick and easy and offers a lot of variety.

Burgers - I buy a bag of frozen burgers to keep on hand. Besdies all the differant types of burgers you can make in a flash, I also will use them to make home made salsbury steak. I cook the pattys in a skillet with worcesteshire sauce. Then add mushrooms and beef broth. Thicken with corn strach or flour. Serve with Mashed potatoes

I keep seasoned, grilled, boneless skinless chicken breasts on hand at all times. Can be used in 100 ways.

I sometimes buy a rotisserie chicken if I don't have time to cook - quick easy healthy go to meal.

Brinner - Breakfast for Dinner - I always have eggs, sausage and pancakes on hand.

Fried rice - I always have minute rice - so, if I am pressed for time or money - Saute a little ckicken, add frozen peas and carrots - set aside. Scramble a couple eggs and set aside. Then add rice, chciken and veggies to a skillet with soy sauce - toss with cooked eggs - yummy.

Salmon patties. A can of salmon in the pantry - mix in a little bread crumbs, mayo, chopt onions and celery - saute in a skillet and serve with wild rice and veggies.

Yum! Here's mine. Hamburger casserole. Brown 1lb. ground beef. Stir in 1c. uncooked white rice and lightly brown. Stir in 1 lge can tomatoes, cut up with scissors, and 1 can chicken with rice soup. Pour into a greased casserole and bake in a 375 oven for 30-45 minutes. It's been awhile since I've made it and so I'm not sure how long it takes. You can also cover the skillet and let it simmer on the stove.
It's done when the rice is soft and the dish is moist and not wet.
