QUICK!!! Salmon Anyone?

quick question, how do you like your salmon cooked? any secret recipes or tricks of the trade? I'm getting ready to cook it in a bit and just looking for some fresh ideas....what sides do you make to go along with it? I have pretty much any and everything...except salad, hubby took the last of it to work tonight for his dinner.

Spread olive oil or white wine on top. Season with lemon pepper, garlic salt & onion powder. Top with onions, lemon slices and capers. Bake at 450 degrees for 4-6 mins per 1/2 inch thickness.

Just made israeli couscous and green beans with mine. Huge family hit. My 3 & 5 yr-olds cleaned their plates. The 5-yr old asked if we could have this meal every night! Good luck!

Probably too late here but here goes.... I made this last night..

1 nice piece of salmon ( about 1 #)

I cut the salmon into 2 pieces. Lay out 2 large pieces of foil, place each piece of salmon on foil. Salt/pepper to taste.

In separate bowl. Drain 1 can of diced tomatoes. Mix drained tomatoes with 1 tablespoon olive oil, about 1 tablespoon lemon juice. Italian seasonings. Chopped onion and chopped garlic to taste. I also use fresh basil. These are basic ingredients... Just mix to your taste. I don't follow a recipe.

Spoon tomato mixture over salmon. Fold foil to create a pocket and completely seal salmon inside. This can be done up to 6 hours before serving. The tomato mixture flavors the salmon. Bake foil packs of salmon for about 1/2 hr on 400. Remove, place in serving dish.

Side: we love rice. I take 1 small can if V8 juice. 1 can of water, leftover tomatoes juice from drained tomatoes, dollop of butter and package of instant Lipton veggie soup mix. Cook until dried veggies are softened, add rice to mixture. Cook until rice is done

We like to grill ours, you can find different seasoning mixes at the store (I like lemon-pepper on my salmon). Might be too late for you to try this, but if we plan ahead, we get a cedar wood plank, soak it in water, coat with olive oil, and cook the salmon on the cedar plank on top of the grill. I like it with jasmine rice on the side and a nice green salad.

I do salmon in the broiler with just a little lemon pepper on it and butter. I make it with seasoned rice and sometimes mixed vegetables.

I keep it simple:

Soak a cedar plank (at least 30 minutes if not longer)
rub a little olive oil on the plank and place your fish on top
Top your fish with a little olive oil, lemon and lime slices and a bunch of rosemary and thyme.
Then, stick it outside on your grill and cook till done:)

I serve mine with a side of asparagus, quinoa salad, fresh fruit.

Grilled Salmon with Lime Butter Sauce

1 large garlic clove, chopped
1/4 cup fresh lime juice
1 teaspoon salt
1/2 teaspoon black pepper
1 stick (1/2 cup) unsalted butter, melted

PreparationPurée garlic with lime juice, salt, and pepper in a blender until smooth. With motor running, add melted butter and blend until emulsified, about 30 seconds.

6 (6-oz) pieces center-cut salmon fillet (about 1 inch thick) with skin
1 1/2 teaspoons finely grated fresh lime zest
6 tablespoons lime butter sauce (above)

PreparationPrepare grill for cooking over medium-hot charcoal (moderate heat for gas).

Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill) 4 minutes. Turn fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more. Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.

We did blackened grilled salmon for dinner last night. Typically we grill it but last night we did it on the stove and then finished in the oven.

2 tablespoons ground paprika
1 tablespoon ground cayenne pepper
1 tablespoon onion powder
2 teaspoons salt
1/2 teaspoon ground white pepper
1/2 teaspoon ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dried oregano

Mix together the above ingredients. Melt 1/2 cup butter and brush 4 salmon filets. Put the dry rub on the filets, then grill until flaky.

We add a bit of lemon to the butter before we brush the filets. It definitely clears out your sinuses!

We like it this way - soak a cedar plank in water, put the samon on top, squeeze a little lemon salt & pepper and bake it in the oven, 350 for about 15 mins. I like rice, risotto, or green veggies with fish.

If you want it grilled, you really need a grill cage.

I use a round baking pan and line it with tin foil and pour down some melted butter..lay the salmon down and pour some more butter and sprinkle with lemon pepper. Heat oven to 350 and salmon cooks for about 15-20 minnutes. Hubby never liked salmon till I cooked it. While its cooking I mix together mustard and honey in a bowl and when salmon is done I pour it over the salmon. Taste GREAT!!!! I do the same mixture of mustard and honey over shake and bake pork chops.

You've received some nice recipes. I'm trying TF's tonight. I have 2 recipes to offer:
Indian-spiced Salmon:
4 (6oz) salmon fillets (about 1" thick)
Cooking spray
2 Tbs lime juice
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground coriander
1/4 tsp ground cumin
1/8 tsp ground cinnamon
1/8 tsp ground red pepper
2/3 C plain yogurt
2 Tbs chopped fresh cilantro (1 Tbs if dried)

(1) preheat oven to 425
(2) Place salmon, skin side down, in a roasting pan coated with cooking spray. Brush evenly with lime juice. Combine salt and the next 5 ingredients (through red pepper) in a bowl, then sprinkle evenly over the fish.
(3) Bake at 425 for 10 minutes or until fish flakes easily with a fork. Combine yogurt and cilantro, and serve with fish, on the side.

I usually serve saffron rice, or a veggie rice, and some steamed green beans with this. NOTHING even remotely Italian, as I made the mistake of that the first time.

The other recipe is more simple, just Baked Salmon:
4 portions of salmon (2 fillets cut in half)
2 cloves of garlic
6 Tbs olive oil
1 tsp basil
1 1/2 tsp Tony Cacheres
1 Tbs lemon or lime juice (I prefer lime)
1 Tbs parsely

1) Mix the "stuff" together for a marinade, marinate the fish for 1 hour, turning over halfway through.
2) Preheat to 375
3) Cover fillets in foil, cover with marinade, seal in foil pockets. Bake 35-40 minutes.

I most often serve this with rice pilaf and mixed veg or steamed asparagus.

"Yummy Salmon"

Take your salmon and put it on a large piece of tinfoil.

Dump one can of diced tomatoes on top of it.

Put either crumbled feta or goat cheese on top.

Add some basil -- preferably fresh, but dried will work, salt, and pepper.

Wrap completely in the tinfoil.

Bake at about 400-425 until done.

Serve with rice or pasta -- I usually do something lemony with the starch

and something green -- salad, broccoli, zucchini, spinach, etc.

So here's my mother's southern style salmon...as in, make it as least healthy for you as possible, but it's yummy.

Clean (deskin, debone) it, crumble, and mix with saltine crackers, an egg, and a little milk until you have a patty. You can season it if you like, but it's perfect just like that. Cook it in the skillet just until brown on both sides and done.

Then she makes this cheese sauce, which is very symptom...if you get a box of cornstarch, there's usually a recipe for "white sauce" on the side...I think nothing more than milk and cornstarch, basically make it like gravy. Then tear up and throw in about 8-10 slices of American cheese (I know, doesn't this just sound gourmet?) and season with salt and pepper, make sure you let it cook until it's nice and thick, but you have to stir constantly or it will burn and taste disgusting. Stir stir stir. Then serve the sauce all over the salmon patties.

I'm telling you, it's delicious. I know it sounds so...well...but it's really good!

I know this is late but.....I put olive oil (just a bit) salt and pepper and grill it. It is WONDERFUL. I make rice, usually one of the seasoned ones. And some veggies.
