ok with homeschooling lunchtime usually sneaks up on us pretty fast.I do mosty from scratch meals and bake my own bread but i'm wondering if you guys have any ideas or reipces for some quick easy lunches.I usually do leftovers from the night before but now the kids are going through growth spurts so there havent been too many leftovers in the house!!

What can I do next?

I take whole wheat pita bread and make a pizza out of it. Sauce, cheese and turkey pepperoni and put it under the broiler for a couple minutes. Also, a good standby for me is a good old fashioned can of soup.

What you put in the section of "a little about me", I TOTALLY AGREE! Bring the family back home if you can instead of daycares. :-) But I know it's not possible for some families and I feel for them.

OK, now to answer your question here....When my son comes home from preschool, sometimes I fix mac and cheese with a hot dog sliced in it. Bologna sandwhich, chips, applesauce. Or I make a fruit dish, kind of like fruit salad so he can eat on that when he gets home. Sometimes I have lunchables, but only the ones with the crackers, cheese, ham or turkey in it. He loves those. So do I. ;-) Grilled cheese is always a favorite among kids. You can put some ham in your grilled cheese too. I usually will throw the ham (the deli style slices), into a skillet and heat it up and then add it to my grilled cheese. I just heat it up without oil or butter.
Or if you have a toaster oven, take a piece of bread, top it with ham and cheese and toast it that way. YUM!
Sometimes I'll make 'pigs in a blanket'. Take a piece of bread, top it with slice cheese, and then a hot dog, bring up the corners of the bread, put some tooth picks in it to hold it together, and then stick it in the oven at 350 for about 20 minutes or until the bread is toasty looking. That will be something easy for you to make all your kidos. And wow...you are an amazing mom! Six kiddos and you're homeschooling them as well. Multi talented I say...LOL
Pizza is always good, and it's a fun way of learning fractions. :-) You can get a veggie one so it will be more nutritious.

Hi W..

English muffin pizza.
The de-constructed sandwich.
Chicken / egg / tuna salad.
Fruit salad.

How about turning lunch-prep into part of their home-schooling? (Measuring ingredients = math; Choosing ingredients = nutrition; Assembling plates = fine motor skills; Following recipe = reading & reading comprehension). And, if you schedule it in as part of the school-time, it might not, "sneak up" as fast :))

I have a 1 year old who is picky....So, I make:
grilled cheese and I stick frozen peas inside of it. They defrost as the cheese melts. Those are pretty quick to make. You can premake just about any sandwice the morning of or night before and put on plates with the side and put in the fridge. We do morning star corn dogs. You cook those in the microwave. You can have them make their own pizza. That takes a bit longer but, it could be a cooking part of your class. :o) Just buy the refrig pizza dough and either cut up for each child or make one big one and they have there own area.
