Chicken thighs
Red peppers
Onions
Cauliflower
....this will be served over spaghetti squash

I normally do Paprika & cream, but I'm out of cream...

I would prefer not to do a tomato-based sauce, but can fall back on that if necessary

I don't have any condensed soups on hand

Would a teriyaki sauce be good?

HELP! I'm stuck ;)

So What Happened?

ooh, yes, I have sour cream...that should do the trick :)

But, if anyone else wants to give ideas, I'd love some ideas for the next time--I've got another head of cauliflower to use this week :)

**Ok, so I slightly burned the food, so threw some teriyaki on it--tastes yummy & covers the slightly burnt taste ;)

For the spaghetti squash, I poke it with a fork about a dozen times, nuke it for 1 min in the microwave, then cut it in 1/2 the long way, scoop out the seeds, and put cut side down in a glass baking dish. I cook it for 40 min @ 350' and it turns out great every time.

you can make a roux (I know I spelled that wrong probably) with butter and flour, and add a little milk to make a sauce. Then add some garlic and cheese if you have it, or you can add mozz cheese and make sort of a alfredo sauce. Do you have a can of milk in the pantry? That would make it good too, or add some chicken bouillon to the roux and make a chicken sauce. You can also pour some on the cauliflower. Good luck!!

Got any plain yogurt or sour cream? You can add some milk to them and sub it for your cream.

I think terriyaki sauce would be good, but you would want to do it in small doses and check as you go, because it's easy to hit it too hard. You just changed your meal from italian to asian quisine, but it should still be good.

On a side note, how do you do your spaghetti squash? I always wondered and the one time I made it I think I did it wrong because it didn't shred in long strands so much as short little pieces like broken spaghetti.

how about a Bernaise sauce? Egg Yolks, lemon juice, tarragon and some water? keep on low heat and whisk until "full".
