LOL you're a step ahead of me on this...I just open up a jar of the Tostitos Queso sauce. Delicious but I can't even imagine what's in it!
My husband LOVES queso dip. We do a pretty typical recipe I found online for little parties: Velveeta cheese, one can of chile, one can of tomatoes and chile. It tastes good but not like what we get in restaurants. I think Velveeta is disgusting and I would like to eat a more natural cheese. However, I want to make sure it gets creamy and gooey in the crockpot. Any suggestions on the type of cheese I should use?

there is a product called Queso fresco try adding that to your velveeta or have you considered making it fresh with cheddar and milk on the stove?
If you use cheddar, queso fresco and some milk it should come out really nice:)

If you want to get it close to the restaurants you need Velveeta, milk, and a couple cans of rotel. Still isn't the restaurants but closer than where you are at.
Try this recipe. The American cheese means a block of Velveeta.

I take grated cheese like cheddar or colby/jack, and add milk. I usually heat the cheese and a bit of milk, then slowly add more milk, while stirring, so that I get the right consistancy...or you can make a bechamel and add cheese. Hope this helps!
Have you tried Cheese Whiz? That's what I always use.
The traditional Tex Mex "Queso". Is a box of American cheese. It comes in the BLUE box and a can of Rotel tomatoes.
Cube the cheese add the can of Rotel and heat it up in the microwave.
I like to saute chopped white onions and Poblano peppers in a little butter and add it to the Queso mixture before heating it in the microwave.
If you are making it with a can of Chili.. that is called Chili Cheese. They serve it on hamburger buns here.. .
